Artichoke Spinach Lasagna

This is my new favorite lasagna recipe, hands down. I first tried it when we were having some vegetarian friends over for dinner, and everyone was begging for the recipe! I like the texture of artichoke hearts so i only cut them into quarters instead of chopping them. When i make it just for our family i add 3/4 lb of cooked ground sausage to the sauce, since we're meatatarians. It turns out great every time! I always double the recipe and freeze one for later, to save time, since it is an intensive dish to make.

Zesty Greek Couscous

Yum yum. I doubled the zucchini and halved the couscous to increase my family's vegetable intake. The cheese wonderfully disguises the healthiness of the dish.

Okra Rice

Extremly good. My mother had garden-fresh okra and tomatoes, so I added some chopped tomatoes at the same time as the rice, and it turned out very flavorful.

Healthy Pumpkin Cranberry Muffins

Yum! I substituted extra whole wheat flour for the all purpose flour. I live at high altitude but these turned out perfect, so moist and flavorful, not dense at all. I will definitely bake these again.

The Best Lemon Bars

I tried the lime adaptation suggested at the end, with the juice of 5 limes (trying for the equivalent of 3 lemons instead of 2). They were awesome! I got rave reviews and suggestions to make them for St Patrick's day next year ( because I dyed them green). The recipe is so easy and the ingredients are inexpensive, I will put this on my regular dessert rotation.

Granny Kat's Pumpkin Roll

I made this for a bake sale and individually wrapped the slices. It turned out beautiful and perfect (and delicious!) on my first try, and I've never made a rolled pastry before. I might add a little more pumpkin pie spice next time because I like a spicy flavor for pumpkin goods but overall this recipe is excellent.

Mom's Zucchini Bread

Yum! It's not too sweet or vegetabley, very moist. I live at 6000 feet. I made the following high-altitude adjustments: 3 cups + 2Tbs flour 3/4tsp baking powder 2 cups +2Tbs sugar

Monkey Bread V

Didn't really care for this recipe. It was ok, but not great. It seemed to me that the short cut of using pre-made canned biscuits compromised the potential texture and flavor of the dish. I will probably suck it up and try one of the from-scratch recipes if i ever want monkey bread again.

Chef John's Lemon Bars

Compared to other lemon bar recipes i have tried this one is significantly more complicated and time consuming, and produces an inferior product. The crust was hard and severely stuck to the pan, and the filling never fully set up. The ratio of tartness to sweetness was very good though.
