Quinoa, Beet, and Arugula Salad

So easy and delicious! Made the recipe exactly as the directions stated. I've never cooked beets, so I didn't realize you had to peel them before you cooked them. I will make this again and again!

Gingered Carrot Soup

I followed the recipe without straying. I burned the first batch of onion, ginger, and garlic, because it took much less than 8 minutes on the stove. The soup is full of flavor, and quite filling!

This is very good and authentic. I cut down the ratio of soy sauce, oyster sauce, and sugar because you only use a tiny portion of that, and the rest goes to waste.

Curried Coconut Chicken

I was highly disappointed with this recipe. I followed the directions exactly and got a dish that tasted more like tomatoes and chicken than coconut curry. I've made several different types of curry and I probably should have noticed how much more tomatoes this recipe calls for compared to others, but it should not be called 'curried coconut chicken'.

White Chocolate Macadamia Nut Cookies III

This was a great cookie! My cookies came out soft and chewy and were still chewy the next day. I give it 4 stars because of all the changes I made based on everyone's comments - I used 1/2 c butter and 1/2 c shortening, added 1/2 tea baking powder, doubled the white chocolate chips and doubled the macadamia nuts. I baked it for 8 minutes which was perfect. Next time I will add a little more salt because I think the cookie was perfect except it needed a dash more salt. With all the changes this cookie was absolutely perfect.
