Sweet and Sour Chicken I

This recipe was delicious. It does however take a very long time to prepare. I had trouble keeping the batter on the cooked chicken pieces (batter too thick? too thin?). For a small family of four this was too much chicken so I will definitely cut it at least by half the next time I make it. The sweet and sour sauce was just right. I used another reviewer's idea of marachino cherry juice for coloring--great idea. All in all it was a good meal and I would like to make it again. It is very time consuming though.

Broccoli Fish Bake

I gave this only three stars mostly because I am not a big fan of fish other than salmon. However, it was easy to make and my family really likes it. I read some of the other reviews beforehand and seasoned the fish before baking. French's fried onions made a nice crunchy topping. I have made it twice using tilapia but I think I will try another type of fish next time. Overall easy and a hit with the family.

Southwestern Chicken and White Rice

If I based my review solely on my own interpretation, I would say this dish is "good". However, my 7 yr old son, who likes next to nothing, raved about this dinner. He rated it as a "favorite" surpassed only by ice cream. Hence, the 4+ rating. SO--my family liked this well enough to eat again. I served it alone but next time will add torilla chips or perhaps make it into wraps of some sort. I added taco seasoning, medium chili beans with sauce, black beans and omited the chicken broth. Next time I will use fiesta corn instead of regular frozen corn. We added sour cream and guacomole as desired. Not a bad meal. Easy to make. Easy to tweak to add pizzaz.

Slider-Style Mini Burgers

My family raved about these burgers. I did not find them to be sloppy joe-like or messy at all. A guest we had for supper the night I made these said they needed sauted onions on them for a more authentic slider taste and I agree with him. However they were very tasty. I did not give 5 stars because I found working with dinner rolls too fussy. I found mini slider buns at the grocery store which I will use next time. I also only baked these for about 15 minutes or so. The meat is already cooked so all that is needed is to "melt" the ingredients together. Also, the shorter bake time allowed the rolls to be warm and soft instead of overbaked as some reviewers commented on. Thanks again for another great recipe that my family enjoys.

Coconut Cake I

I have made this cake twice since Easter. Both times it got rave reviews. It is good but very sweet and rich. The second time I made it I added raspberry jam to the filling. It tasted heavenly but turned the filling a strange gray-lavender color. I c Coconut lovers will not be disappointed. I will make this cake again and again. It is a great "special occasion" cake. Easy, too!

Salmon Patties III

Hubby loves these. I do not especially like to cook so recipes that are easy really appeal to me--and this one fit the bill. The changes I made were to use instant red skinned potatoes instead of cooking and mashing a potato and I substituted Panko bread crumbs and french fried onions for the cornflakes as that is what I had on hand. Delicious! Next time I may add a bit of crab meat too.

Cheesy Beer and Spinach Dip

Took this to a party and no one really cared for it. The consistency was "gummy" even though we kept the dip in a warmer. Weird color. Just didn't go over too well. Lots of other dips that taste and look better so I won't make this again.

Spinach and Feta Turkey Burgers

These burgers are really tasty. My family raved about them. I had read the reviews and added bread crumbs and s&p only to have the burgers be a little too dry and salty for me. Next time I will follow the recipe as written and see how that goes. I also want to try them with Tzatziki sauce and see if that adds a bit of zing as well. Overall a great recipe--5 stars for this family!

Sausage Pasta

Excellent! My family practically stood up and cheered. Even my son who does not like sausage gave this a big thumbs up. I like that it can be added to without changing the entire dish. In my case, I added zuchinni and a bit of pesto. We will definitely be having this again and again.

New Orleans Corn Bisque with Smoked Sausage

This soup is very tasty although I found it needed A LOT of seasoning. In my case, I added garlic, thyme and extra salt and pepper. I used half and half and chicken stock for the base. Also added diced carrots for a little color. Super easy and very good!

Gorgonzola Stuffed Chicken Breasts Wrapped in Bacon

I made this tonight for the family and for this first-time try I am only giving it three stars. The flavors were good--no complaints there. It was however very dry and overly salty (bacon!). I omitted the parsley because we do not like it. I wrapped the chicken and filling around aparagus spears and topped with the bacon (precooked a bit). I put some apple juice in the pan, covered with foil and baked for 35 minutes. I uncovered for the last 15 minutes. I used the pan drippings and added it to the leftover cheese filling and thickened a bit---wonderful!!! Served everything over a bed of wild rice. The family gave it thumbs up but we all were disappointed at the dryness of the chicken. We will definitely try it again. A bit high in calories and fat to have very often but a nice 'upgrade' from everyday. Thanks for a tasty recipe.

Chicken and Spinach Alfredo Lasagna

This lasagna was wonderful! I used jarred roasted tomato alfredo sauce instead of making my own. I also added some sliced tomatoes. I cooked the chicken in the slow cooker with italian seasoning and shredded it before adding it to the onion-mushroom-tomato-spinach mix. I took this to a friend's house for dinner and everyone raved about it. I like this recipe because you can change it up a bit like I did and still be fairly true to the original. It was not hard to make and the results are truly 5+stars. Really, really delicious! A keeper for this cook!

Very Easy Crab Dip

I have been making this dip for many years and although it is easy and tasty, it is not visually very appetizing. DO garnish it up to make it 'pretty'. Regardless of it's apperance, it is usually a favorite on the hor dourve table. A whole jar of cocktail sauce tends to be a bit much. Mix it in a little at a time until you are satisfied with the taste. I have tried all kinds of crab meat and it all works fine. A dollop of horseradish tastes good, too. This is a versatile recipe and for a party you can't go wrong with this dip and some crackers.

Kyle's Favorite Beef Stew

Okay, this isn't even out of the oven yet but I have tasted it and it is divine! Having never made beef stew I was not anticipating great sucess the first time around but this recipe is the bomb! I followed it exactly except that the store was out of onion soup mix (?) so I substituted a packet of McCormick Beef Stew seasoning. Everything else I followed. I could not get this all into the crock pot so I had to transfer to my roasting pan and I cooked it all day at 230 degrees. Let me tell you , the house smells sooo good! I personally liked the flavor better before adding the wine, but it still is very, very good. I also find it to be a bit peppery but again, that's just personal taste and it does not detract overall from the stew's flavor. I think I am going to add some peas as well. I can tell already that I will make this time and again. Thanks for sharing this wonderful 'comfort' food recipe. Now, time to pop the french bread into the oven.....

Pesto Chicken Penne Casserole

Only three stars on this first try. The flavors worked well together and it was a beautiful looking dish, but it turned out very dry. I made my own alfredo with ff cream and olive oil spread to decrease the fat content somewhat. As others suggested, I decreased the amount of pesto and I did not use quite as much cheese--about 2 cups. The family really liked it and my 13 year old is excited that we are having left-overs tonight. I am going to add some more milk and maybe a touch more cheese on top during warm up. All-in-all very tasty and definitely one I would recommend.

Alternative Baked Salmon

This salmon turned out splendidly! I followed the recipe except that I used minced garlic and brown mustard in place of the powders. I added some Panko bread crumbs to the seasoned crumbs for bigger crunch. The mix seemed a bit dry and so I added a bit more mayo (lowfat) until it was the desired consistency. I squeezed some fresh lemon over the filets prior to putting the breading on. I baked them for 15 minutes but my family was too hungry to wait for me to pop the salmon under the broiler and so I skipped that step this time. The crust was still nice and crunchy even without being broiled. The garlic and spices and the lemon all worked together well. Just a really nice change from my usual broiled salmon. My family liked it and we will have it made this way often. Thanks for sharing this tasty recipe.

Crab-Stuffed Mushrooms

Very, very yummy! My husband and I have made these twice. Once forour Christmas Eve party and again recently to a wine party at a friend's house. Both times everyone raved about them. We followed the recipe closely but we added a bit of cooked bacon (or real bacon bits would probably work, too). It doesn't matter if you use chunk crab or canned crabmeat choose according to your preference. We used canned. We put a bit of garlic in the mix as well. Also, we mixed the Parmesean cheese into the crab mixture and then filled the mushrooms. French fried onions crumbled on the top worked nicely. Plain Panko crumbs and fresh parm were also great (batch 2). All-in-all these mushrooms are a nice appetizer that taste like something you would order at an upscale restaurant. Best when served very warm. Enjoy!

Rosemary Ranch Chicken Kabobs

Only two stars for this recipe. It was easy to prepare and I had all the ingredients on hand. I did not make the kabobs but instead marinated and then baked boneless chicken breasts. Otherwise, I followed the recipe. The chicken was nice and moist and I did like the rosemary a lot. The family said it was 'okay'. The sauce, mediocre in flavor, was off-colored beige and not visually appetizing. Therefore the two stars. I might try this again (it never hurts to give something another go) but I will grill it as the recipe states and see if that makes enough of a difference to keep this recipe on hand. Thanks for posting--it is always fun to try new dishes.
