Chicken Fiesta Salad

This is a very tasty salad and a great change from ordinary Taco Salad. It's also very flexible. I made a couple additions- avocado, cilantro, and mango. Also I found a jalepeno ranch dressing in the produce section at the store and put it on the side. Delicious! Don't forget the tortilla chips!

Chicken and Spinach Alfredo Lasagna

Although this lasagna is pretty good, I was expecting better after all of the work I put into it. The blandness that others commented on may be because there isn't much salt called for in the recipe. I may try it again with alfredo sauce packets instead because this sauce still tastes like canned cream of mushroom soup to me, even though I followed the directions exactly. The final product was a little runny because, when you put the spinach in fresh and then bake it, it exudes a lot of water into the ricotta layer underneath. In order for this lasagna to be worth the effort, it needs a few changes. But it has potential.

Salmon Puffs

First off, this recipe is not as difficult as it may first appear. I had dinner on the table in 45 minutes. This dish has great presentation; my husband said it was "fancy." The filling is very rich. A little goes a long way so be sparing. In the future I will probably add some spinach as the author suggested for more color, nutrition, and variety. Overall, a lovely dish for the not-too-picky eater.

Crayfish or Shrimp Pasta

This is very good dish, especially for such a simple recipe. I used half and half and wisked in 1 tablespoon flour for thickness. In the future, I may try adding some fresh garlic. Also, if your cajun/creole seasoning doesn't have salt added, be sure to add some salt!

Red Pepper-Salmon Pasta

Let me just say- FANTASTIC! This dish is restaurant quality. And not too much work considering how delicious it turns out. I made a couple minor changes- it needs a bit of salt to tie all the wonderful flavors together and I also added about a 1/3 cup cream to the sauce to make it a little creamy. This dish is extremely healthy, even when you add a little cream. It is sure to please any salmon-loving guests! Five stars!!!

Delicious Turkey Glaze

We made this last Thanksgiving (with regular apple cider) and it is delicious! This Christmas, my husband is demanding that we have it again and not try any other glazes. During cooking, the cider flavor gets into the stuffing as well (if you stuff your turkey) and makes it even more delicious! Enjoy!

Sugar Glazed Salmon

I've had much better salmon. The flavors were odd together (my husband and I usually like a sweet glaze) and not at all appealing. The vinegar was strong, and in my opinion, doesn't belong with a subtle tasting fish. I will not make this again. It ruined a perfectly good filet. I recommend "Baked Dijon Salmon" instead.

Chocolate Revel Bars

These are very rich and tasty bars. The oatmeal layer could probably be reduced by half for the 13x9 pan-- it was thick and a little dry. Perhaps next time I will add less oatmeal. Also, I sprinkled the walnuts on top instead of adding them to the chocolate, which made a prettier presentation. The chocolate layer is delicious. With a little tweaking this recipe can be very good.

Asparagus Chicken

Creamy Caramel Flan

After reading a good deal of the reviews, I tried this recipe, but I decreased the amount of cream cheese to 4oz. I was looking for a creamy and light flan (rather than thick and rich and cheesecakey). This was perfect! The caramel is the hardest part, followed by the whole water bath process... but the results are well worth the effort. Many reveiwers mentioned that the caramel "never set up." Traditional flan does not have gooey sticky caramel, but rather a light thin caramel sauce. It's not supposed to set up. Anyhow, this flan recipe is delicious and creamy, with perfect caramel sauce. I don't plan to try any other flan recipes. This one is perfect.

Mediterranean Crusted Chicken

Was a very nice and tasty chicken dish. Next time I will add a bit more salt to the breading and leave the foil off longer in baking- the "crust" was kind of soggy. Otherwise, very good.

Spicy Red Bean Soup

This soup is a lot more sweet than spicy, probably because of the amount of ketchup in it. It is somewhat reminiscent of baked beans. Anyhow, it was not what we expected, and it was quite a lot of work for not a very impressive meal. Will not be making this again.

Salad with Prosciutto and Caramelized Pears and Walnuts

This salad is delicious. I made it the first time and followed the recipe exactly except I used bacon instead of prosciutto (because it's hard to find here). The second time I did not carmelize the pears, which was a fresh twist. The flavors were all still there-- both are very good. Other reviewers who complained about the olive oil taste may just want to use a milder olive oil.

Beezie's Black Bean Soup

We enjoyed this soup but, as others mentioned, it's a lot like a chili. Perhaps next time I will cut back on the amount of chili powder and substitue other flavors... I think that will help it from tasting like chili. Otherwise, very good and healthy! We ate it with a dollup of sour cream and fresh cilantro.

Pizza Dough II

This is a pretty good dough recipe, but I've had better. It rises well and gave me no problem in preparing. If you're looking for a recipe that works, but isn't terribly impressive taste-wise, go for it.

Restaurant-Style Tequila Lime Chicken

I used the ranch dressing and salsa mixture as other reviewers suggested and it was delicious (plus it really simplified things!). For extra lime flavor, I squeezed fresh lime juice over the top just before serving and also garnished with a few slices of avocado. Yummy. My husband loves it!

Tropical Salad with Pineapple Vinaigrette

This salad is amazingly tasty. I really enjoyed the combination of flavors. If you enjoy sweet, savory, and crunchy with a variety of textures in your salad, definitely give this a try. Yum!

Candied Chicken Breasts

After reading the many reviews that claimed the breading got soggy, I decided to go ahead and make the chicken by skipping the breading step. I cooked the chicken in the sauce and it was delicious over white rice. Very good. I may try it again in the future with the breading step, but I can't see how it won't get soggy.
