Asparagus Chicken

We really enjoyed this recipe. For a simpler version, bake the chicken directly in the prepared hollandaise sauce and top with asparagus.

Beezie's Black Bean Soup

We enjoyed this soup but, as others mentioned, it's a lot like a chili. Perhaps next time I will cut back on the amount of chili powder and substitue other flavors... I think that will help it from tasting like chili. Otherwise, very good and healthy! We ate it with a dollup of sour cream and fresh cilantro.

Absolute Mexican Cornbread

This is great cornbread! I cut the recipe in half for just me and my husband and I used fresh jalepeno instead of canned green chilies because I had it on hand. It was moist and flavorful. I served it with Black Bean Soup. Will definitely use again.

Pistachio Cream Cheese Fingers

I waas disappointed with these cookies. I made them just before Christmas. Although the actual cookie was pretty good, the addition of the chocolate was a weird combination with a funny aftertaste. I will probably never make these again, but if I did I would definitely use white chocolate or no chocolate at all. These are a bit time consuming, the dough is tough to work with, and the ingredients aren't cheap... so be sure you like all the flavors together before attempting these.

Candied Chicken Breasts

After reading the many reviews that claimed the breading got soggy, I decided to go ahead and make the chicken by skipping the breading step. I cooked the chicken in the sauce and it was delicious over white rice. Very good. I may try it again in the future with the breading step, but I can't see how it won't get soggy.

Cranberry Orange Cookies

These are great cookies! I tried a variation and used white chocolate chips in lieu of the frosting and pecans instead of walnuts. Delicious! Everyone loves them!

Iced Pumpkin Cookies

I was disappointed with this recipe. Other reviewers mentioned that it is a cake-like cookie... I found them to be just like pumpkin bread but in cookie form. It would be much easier to bake a pumpkin loaf and drizzle it with icing than to go to all the trouble of making these cookies for the same results. The flavor isn't bad, but the texture is just not what I'm looking for in a cookie.

Easy Broccoli Quiche

This recipe was easy and turned out very nice. Would be good for company. You can easily add crumbled bacon or diced ham if you prefer your quiche with that flavor. Would not hesitate to make this again.

Beth's Chocolate Chip Cookies

We love these cookies! I have a variety of cookie recipes, but my husband now only asks for these. The pecans really make the difference. Be sure not to overbake-- these are perfect and soft when you take them out right on time or even a little early. Wonderful!

Chicken and Spinach Alfredo Lasagna

Although this lasagna is pretty good, I was expecting better after all of the work I put into it. The blandness that others commented on may be because there isn't much salt called for in the recipe. I may try it again with alfredo sauce packets instead because this sauce still tastes like canned cream of mushroom soup to me, even though I followed the directions exactly. The final product was a little runny because, when you put the spinach in fresh and then bake it, it exudes a lot of water into the ricotta layer underneath. In order for this lasagna to be worth the effort, it needs a few changes. But it has potential.

Easy Key Lime Pie I

Quick, easy, and very yummy! I used all fresh lime juice and it turned out delicious. I also added two drops green food coloring and some lime zest as others had mentioned. I can't see how this pie can go wrong! Great recipe.

Chicken Fiesta Salad

This is a very tasty salad and a great change from ordinary Taco Salad. It's also very flexible. I made a couple additions- avocado, cilantro, and mango. Also I found a jalepeno ranch dressing in the produce section at the store and put it on the side. Delicious! Don't forget the tortilla chips!

Chocolate Revel Bars

These are very rich and tasty bars. The oatmeal layer could probably be reduced by half for the 13x9 pan-- it was thick and a little dry. Perhaps next time I will add less oatmeal. Also, I sprinkled the walnuts on top instead of adding them to the chocolate, which made a prettier presentation. The chocolate layer is delicious. With a little tweaking this recipe can be very good.

Salad with Prosciutto and Caramelized Pears and Walnuts

This salad is delicious. I made it the first time and followed the recipe exactly except I used bacon instead of prosciutto (because it's hard to find here). The second time I did not carmelize the pears, which was a fresh twist. The flavors were all still there-- both are very good. Other reviewers who complained about the olive oil taste may just want to use a milder olive oil.

Butterscotch Chewies

Sour Cream Chicken Enchiladas

My husband loves these enchiladas! He asked me to make them once a month. Some other reviewers found the sauce to be too thin; I found it to be a bit too thick after cooking... I think it just depends on how much water is in your salsas. I used pepper jack cheese and white corn tortillas. The best!

Red Pepper-Salmon Pasta

Let me just say- FANTASTIC! This dish is restaurant quality. And not too much work considering how delicious it turns out. I made a couple minor changes- it needs a bit of salt to tie all the wonderful flavors together and I also added about a 1/3 cup cream to the sauce to make it a little creamy. This dish is extremely healthy, even when you add a little cream. It is sure to please any salmon-loving guests! Five stars!!!

Mediterranean Crusted Chicken

Was a very nice and tasty chicken dish. Next time I will add a bit more salt to the breading and leave the foil off longer in baking- the "crust" was kind of soggy. Otherwise, very good.
