Cherry Poppyseed Twinks

These are pretty little cookies. And yummy too. They have a delicate flavor, almost like soft shortbread. I used marashino cherry halves rather than preserves or jam. Yummy!

Chicken Tortilla Soup III

This soup is not at all what I expect with a Tortilla Soup. It's much more like a corn chowder. I didn't care for it at all. Sorry.

American Lasagna

This is good. I used italian sausage as a matter of preference. I also tossed in some cottage cheese to the ricotta mixture because I needed to use it. The "sauce" was my favorite part.

Creamy Caramel Flan

After reading a good deal of the reviews, I tried this recipe, but I decreased the amount of cream cheese to 4oz. I was looking for a creamy and light flan (rather than thick and rich and cheesecakey). This was perfect! The caramel is the hardest part, followed by the whole water bath process... but the results are well worth the effort. Many reveiwers mentioned that the caramel "never set up." Traditional flan does not have gooey sticky caramel, but rather a light thin caramel sauce. It's not supposed to set up. Anyhow, this flan recipe is delicious and creamy, with perfect caramel sauce. I don't plan to try any other flan recipes. This one is perfect.

Pumpkin Pancakes

Good recipe, great flavor, but I had to tweak it a bit to get the pancakes the right texture. My first few were dense and gooey, not light and cakey. In addition to more milk, as others recommended, I also added another egg and more flour. After those changes, they were delicious.

Pumpkin Cheese Bread II

This is very good bread. I'm the sort of person who likes to make things that have a little something extra to them, and this recipe fits the bill. Not just plain old pumpkin bread. I did, however, have some trouble with assembly. It was difficult to spread the second pumpkin layer over the cream cheese layer... the cream cheese wanted to rise up because it was a thinner consistency. I'm not sure how to resolve this, but I will be trying again and perhaps tweaking it a little. Also, I could only make one loaf from the original recipe rather than two stated.

Pumpkin Pecan White Chocolate Cookies

My husband, son, and I really like these cookies. I was afraid they would be too cakey, but they're actually perfect about 10-15 minutes after coming out of the oven. One word of caution, however- I sealed them in a container for storage and came back to soggy cookies the next day. Much better fresh.

Mandarin Orange Cake I

Florentine Artichoke Dip

This is a wonderful recipe. I served it with blue corn chips, which made for a colorful presentation. It was almost all gone at my son's birthday party and I made double the amount that I needed for the number of people. Yum! I did add mozzarella as others had suggested.

Chicken and Broccoli Braid

This is a fun recipe. You have to make it quickly though because the dough gets too soft and begins to fall apart when assembled. To make it more kid-friendly for my son's birthday party, I made it with pizza sauce, pepperoni, and mozzarella cheese instead of the chicken and broccoli. Yum! It was the first thing to disappear at the party.

Best Italian Sausage Soup

This soup is hearty and yummy. I simplified it by sauteing the onions and garlic right in the pan with the sausage. Saved a whole step. I couldn't get the fettucine so I did cheese tortelini as another reviewer suggested. Next time I will prbably just go for regular fettucine or no noodles at all. Delicious though.

Easy Spicy Chicken and Rice

This was easy and yummy for a cold night! I did add cheese on top as other reviewers had suggested. I used the tomatoes with the chilis and didn't find it too hot, but would probably be a little too hot for kids.

Butternut Bisque

I like this soup, but the end result was too thin. Next time I will add less broth or more squash than it calls for. As a matter of flavor preference I added one clove of garlic and less allspice. The squash was plenty sweet enough without adding a bunch of sweet spices as well. 1/4 tsp of allspice was just enough to give it depth of flavor without sweetening it more. A good soup with some minor changes.

Restaurant-Style Tequila Lime Chicken

I used the ranch dressing and salsa mixture as other reviewers suggested and it was delicious (plus it really simplified things!). For extra lime flavor, I squeezed fresh lime juice over the top just before serving and also garnished with a few slices of avocado. Yummy. My husband loves it!

Tropical Salad with Pineapple Vinaigrette

Pecan Pie Surprise Bars

I was skeptical about these because of the cake mix, but they are delicious. I served these near Christmas, cut into triangles. Nice presentation. Very rich and tasty.
