Greek Slow Cooker Chicken

I love big bold flavours and was encouraged when I read the reviews. I used thighs and drumbsticks (not a chicken breast fan at all), added more lemon, a bay leaf, organic chicken broth, and some thai chili for a little kick. Cooked on high for 6 hours which turned out to be perfect. However - this dish was as boring as it gets. Had to use Colmans mustard for some flavour. Not worth the time.

Amazing Ribs

Jalapeno Pepper Jelly

The consistency of this jam was nice, but canned jalepenos??? NEVER - not to mention the food coloring? Why would I want to add these to my fresh food?

Crab Linguine

I have been making a non-dairy version of this for years. Saute sliced red onion, 1-2 serrano peppers (to taste) julienne any veg u would like, add 2 wine glasses of white wine, the juice of 1 lemon, salt & pepper and reduce to about half. Add crab meat and a large handful of chopped herbs - coriander/basil/thyme work great. Add cooked pasta, toss and enjoy!

Baked Slow Cooker Chicken

This was my very first venture into slow cooking. Saw this recipe and gave it a whirl. The foil balls in the bottom were a bit dodgy for me so I substituted for carrot, onion, celery and broth. Stuffed the bird with lemon, garlic and fresh thyme. The good news it was, as most reviewers have stated was literally fall off the bone. In fact there was not a part of the chicken I could save from becoming simply burrito filling. Skin white and limp but moist shredded chicken without the hassle of shredding it. Would I endevour to cook a whole chicken this way again? Not on your life. This simply did not come close to a crispy skin, succelent dark meat and moist breast meat. But for ease of clean up and instant shredded meat, sure. Not giving up on slow cooking tho - I think I better stick to stew!
