Baked Orange Roughy Italian-Style

Marinara Sauce III

First, the flavor of this sauce is fantastic. However, after the first hour of simmering, all the liquid evaporated, and the sauce became more of a paste-- I kept adding wine to try to thin it out. This recipe is a good base for a sauce, but not a good sauce by itself.

Quick and Easy Stuffed Peppers

very quick and easy. But my wife did not feel the stuffing blended well with the taste of the pepper. She also wanted some sort of sauce in the stuffing.

Salmon with Brown Sugar and Bourbon Glaze

This was very easy to make, and a big hit with some people who don't normally like salmon. The flavor of the bourbon and brown sugar covers the salmon taste, without destroying the salmon's delicate texture. The sauce is good enough that I want to try it with other pan-seared meats as well.

good, but needs something "crunchy" to give it a little more texture. Will try sprinkling crushed corn chips at the end next time and see how that works.
