Aussie Chicken

Rich and Creamy Beef Stroganoff

This was yummy! To be fair, I did change it a bit. I used beef shank bones simmered for several hours, shredded the meat and used the broth in the recipe. I also used a little extra broth and milk to thin the sauce. I used white wine instead of red, since I prefer the flavor. I cut back on the red pepper flakes and there was still a bit of kick, even with approximately 1 tsp. I also added 1 Tbsp of red wine vinegar. There is no need to follow the instructions quite so closely. I just cooked the meat, cooked the veggies together, made the sauce and threw everything together! It was really good and this will be my standard recipe from now on!

Brown Sugar Meatloaf

This was very good... we really enjoyed this recipe! I changed it slightly. I didn't have eggs, so I omitted. We didn't notice that it really needed them. I used crushed croutons instead of saltines. I also added 2 small cloves of garlic, as another reviewer mentioned. I also put the glaze on top and covered with foil partway, and then removed the last 1/2 hour. I found it needed to be cooked longer than it said. I baked at 400 for about 1 hr and 10 minutes (and I only used just over 1 lb of beef).

Broiled Tilapia Parmesan

This was exceptional! I did everything just like the recipe stated, except I added a couple dashes of lemon pepper. It was really, really good, and very fast and easy. I highly recommend it.

Baked Ziti I

I only give it four stars because I totally changed the recipe and I don't think the original recipe would have been as good! :-) I added a bit of cream cheese to the other cheeses, added lots of spices, garlic and sherry to the sauce, used full fat meat and whole wheat pasta. It was very good!

Crispy Orange Beef

I give this five stars! My husband and I really liked it. I did everything according to the recipe, except adding some chopped green onions and a few dashes of Chinese hot sauce at the very end. I did not have enough fresh ginger, so I put in about 1 tbsp and added about 1/2 tsp or so of powdered. I think 3 tbsp of ginger might make it too strong. I also found I did not need quite as much oil as called for. 1/3 cup or so was plenty for me. It had great flavor and we both loved the crispy texture of the beef. I will definitely make this again!

Caramel Apple Pork Chops

This was excellent! I made a little extra of the glaze, using some maple sugar rather than all brown sugar. I also did not cook the chops quite through, and then added them in and cooked them for like 5 or 6 minutes on med-low, mostly covered, and constantly turning and spooning glaze on them. The apples themselves were amazing. I would put more in next time.

Sesame Beef

I changed this recipe a bit, but I might try to do it more like the recipe next time! I really liked the flavor, but I cooked onions, zucchini and green pepper right in with the meat, and it caused the meat to over cook (while I was waiting for the veggies to soften). Next time I will pre cook the veggies and add them in at the end. I also added a bit of cornstarch to the sauce, because with the extra liquid from the veggies, it was a bit too watery. Otherwise, it was a great recipe and super easy!

Kung Pao Chicken

This was very good! I wavered between 4 and 5 stars, actually, but decided on 4 because I made a few little changes which improved it. Because we are a bit sensitive to spiciness, I cut the chili paste in about half. I also doubled the brown sugar and added extra water to the finished dish, which made more sauce. This recipe had excellent flavor and I will certainly be making it again!

Chicken or Turkey Crepes with Tarragon

I decided to give these 4 stars because my husband really loved them I, unfortunately, can't go by my own tastebuds right now, because I'm newly pregnant and am repulsed by anything with chicken! But these were quite good, and I followed the recipe almost to a T. Great with baked apples as a side and served with a few drops of lemon juice on top. I made the crepes from a different cookbook and made a little extra sauce.

Chicken Lo Mein

This was quite good! We halved the ginger, because I thought it would be too strong, and I tossed in a bag of frozen stir fry veggies and extra green onions. I think it would have been lacking without that. We served over linguine and topped with crunchy chow mein noodles. the only 2 things I would do would be to try adding oyster sauce (at the recommendation of other raters) and use low sodium soy sauce, because it was too salty. With these tweaks, I would definitely make this again sometime!

Easy Chicken Fajita Soup

I really liked this soup, and would make it again. I used homemade chicken broth and leftover shredded chicken off the bone, which I think gave it a very delicious flavor. Everything else I did about the same, except I followed the recommendations of other reviewers and more than doubled the broth in the recipe. It made it more watery than in the picture, but that worked quite well, because it did stretch it more! (And I eliminated the hot sauce, finding it had enough spice on it's own).

Mouth-Watering Stuffed Mushrooms

These were so good! My husband and I loved them. I used fresh garlic and cut back a little on the cayenne. I also put in 1 Tbsp of fresh onion, instead of the onion powder, and a tiny bit of salt. They were great, and not very difficult!
