Snickerdoodles II

I made these yesterday and they came out really yummy! I used butter instead of shortening, added 2 tsp of vanilla and only added 1/2 tsp of cream of tartar, like several other reviewers did, as well as 1/2 tsp of salt instead of 1/4 tsp like the recipe says. I was half way through making these when I realized I barely had any cinnamon. :( So, I ended up just using nutmeg and sugar to coat the balls of dough in and they still came out really yummy! My dough was a bit wet when I first made it (I think this was because i had my butter sitting out for too long) so I just popped the dough in the fridge for awhile (about 15 mins) and then made the dough into balls and baked. They flattened out nicely (not too flat, mind you) and they are soft and chewy~the perfect snickerdoodle! :) The next time I make these however, I'm going to use more cinnamon! hehe :P

Lemon Cream Cupcakes

These are DELICIOUS! Very light and moist! Truly the "perfect" cupcake! I added 2 tsp of lemon juice to the batter and left out the lemon zest as I didn't have any. I also added 3 tsp of baking powder (instead of 1/2 tsp as the recipe calls for. I don't think they would have puffed up enough if I hadn't added the extra) as well as 1 tsp of almond extract. I also only added 1 and 1/2 cups of sugar instead of 2 cups. They came out nice and sweet still! :) For the frosting, I followed the recipe given here except for the following changes: I added only 2 cups of powdered sugar instead of 2 and 1/4 cups as the recipe says. The consistency came out perfectly for me. Not runny in the least! These are outrageously good! I will be making these again! Thank you for sharing!

Easy Pancakes

These are really easy to make and really yummy! I did do what a lot of reviewers did and added only 2 TEASPOONS of Baking Powder, rather then 2 TBSP, as the recipe says as well as skipping the vegetable oil. They worked fine without it!. I also found it necessary to cut down the salt-from 1 tsp, to a 1/2 tsp. It was waay too salty with the whole tsp (and I LIKE salt)!! And I added 1 tsp of vanilla extract, as well. It helps bring out the flavors of everything so well! Other then that, I kept everything in the recipe the same. Your family will enjoy these! :)

Cajun Pasta Fresca

I absolutely love this dish! I did add shrimp to it, to add a little more 'bulk' to the recipe, but I've made it without the shrimp too and it's great either way!! :) Thanks for sharing this recipe!

Extreme Chocolate Cake

This cake tasted really good! However, it stuck really bad in my cake pans. I used non-stick cake pans and I only greased them (didn't flour them) so perhaps it was my fault the cakes stuck in the pans, but I'm afraid to try this recipe again for fear that they'll stick again-even if I grease AND flour my pans. I made the cake as written and used a whipped cream/cocoa frosting-it was so light and fluffy! :) Overall, this cake was tasty, just the fact that it stuck really bad in the pans makes this recipe rated only a 2. :(

Pumpkin Chip Muffins

I just love these muffins! So simple to make and oh so yummy! They're the best warm out of the oven, but they're great after they've cooled too. :) I do what several other reviewer's have done which is leave out 1/2 cup of the oil and also I leave out 1/2 cup of the sugar and I only use 1 cup of chocolate chips. I think 1 cup is definitely p-lenty! :) These are so delish, if I could rate them above 5 stars, I would!!
