About this Cook
God is the reason I am here so I must give Him thanks first. :) He is such an incredible Father and He has blessed my life so much in every way! I am happily married to the love of my life since last September and he is my inspiration and joy every minute. He is always there for me and he is just the most wonderful person on earth and I love him so much! We are expecting our first little blessing from God this coming September and are SOO happy and excited to meet him or her! We both think it's a boy, but we're waiting to find out 'til the birth! :) I have the GREATEST parents in the world who have done so much for me over the years and have given me all of the values and faith I have now. I am also the oldest of 10 children and love it! Being oldest has always been a challenge, but it's definitely been a good one. I love all my siblings to death and love spoiling the little ones!
My favorite things to cook! Anything Mexican or Italian...I love using lots of fresh herbs and ingredients. There is always so much more flavor in fresh. I also really enjoy baking~anything with chocolate in it is a favorite (brownies, cakes, cookies), as well as breakfast items-coffee cake, muffins, sweet breads, etc. :)
My favorite family cooking traditions
My mom is my all time "kitchen hero." :) She's taught me everything I know about cooking and thanks to her, I LOVE being in the kitchen! I did a lot of cooking alongside her for my family growing up and that really bonded us together in a special way. I have so much to be thankful for her for! :) My husband's mother has let me help her make her delicious enchilada's and I've tried to re-create them, but I still have to work on them. :)
My cooking triumphs
Well, every time I make a meal and my hubby either says "Wow" or gets up to have seconds I feel that I have truly triumphed. There isn't anything I like better then cooking for my husband and pleasing him with what I make. Thanks be to God he is not a picky eater so I have it pretty easy! :)
My cooking tragedies
Well I've definitely had these. lol Mainly they were when I was little. For some reason I almost always forgot either the salt or Baking powder/Baking soda when I was making either cakes or cookies. Hence, lots of "flat" baked goods! haha But I've grown out of those mistakes and haven't made too many lately. :) Hopefully it'll stay that way! :)

Cajun Pasta Fresca
I absolutely love this dish! I did add shrimp to it, to add a little more 'bulk' to the recipe, but I've made it without the shrimp too and it's great either way!! :) Thanks for sharing this recipe!

Snickerdoodles II
I made these yesterday and they came out really yummy! I used butter instead of shortening, added 2 tsp of vanilla and only added 1/2 tsp of cream of tartar, like several other reviewers did, as well as 1/2 tsp of salt instead of 1/4 tsp like the recipe says. I was half way through making these when I realized I barely had any cinnamon. :( So, I ended up just using nutmeg and sugar to coat the balls of dough in and they still came out really yummy! My dough was a bit wet when I first made it (I think this was because i had my butter sitting out for too long) so I just popped the dough in the fridge for awhile (about 15 mins) and then made the dough into balls and baked. They flattened out nicely (not too flat, mind you) and they are soft and chewy~the perfect snickerdoodle! :) The next time I make these however, I'm going to use more cinnamon! hehe :P

Extreme Chocolate Cake
This cake tasted really good! However, it stuck really bad in my cake pans. I used non-stick cake pans and I only greased them (didn't flour them) so perhaps it was my fault the cakes stuck in the pans, but I'm afraid to try this recipe again for fear that they'll stick again-even if I grease AND flour my pans. I made the cake as written and used a whipped cream/cocoa frosting-it was so light and fluffy! :) Overall, this cake was tasty, just the fact that it stuck really bad in the pans makes this recipe rated only a 2. :(
