Stroganoff (oldest's favorite, mexican lasagne, white chicken enchiladas, my special cheesecake, tuna casserole (for the quick nights).
My favorite family cooking traditions
Authentic mexican enchiladas on Christmas Eve. My step-dad was Mexican and that was our Christmas Eve tradition. Enchiladas and one present opened!
My cooking triumphs
I learned how to make omelets and crepes. I am not a big breakfast person though. Also, turning leftovers into something just as awesome but totally different the next night. I turned a slow-cooked pork roast, with potatoes and carrots into chili the next night. I just chopped everything, added a couple cans of great northern beans and a packet of white chicken chili seasoning back into slow cooker. It was amazing. I never thought carrots in chili would be good. Who knew?
My cooking tragedies
My ex-husbands 21st birthday cake was completely burnt and then I tried to frost it while it was still warm! I was only about 17 at the time. He ate it though. :) Now I buy store made cakes for the kids, but I think we are going to try to get more creative with birthday desserts than regular over sugared birthday cakes from the supermarket.
