Chicken Pot Pie IX

PREBAKE bottom crust first. Try brushing egg white on the bottom of the crust too. Increase the liquid. Add seasonings (garlic powder, poultry season, thyme, crushed red pepper). Brush top of pie with egg white. Serve. Sit back and wait for the rave reviews!

Southwestern-Flavored Ground Beef or Turkey for Tacos & Salad

Not sure about the "Southwest" flare, but I did add a can of the Rotel mix for the tomatoes, added the spices, and kicked it up a notch with a chipotle pepper and sauce. Toppings for the salad included a black bean and corn mixture. Quite easy and tasty.

Cranberry Scones

I did this recipe as directed. Yes, the scones were very wet with the batter, so instead of adding so much flour, I simply split the recipe in half, dusted them with flour, then put each into a sprayed glass bread pan. No rolling, no fuss, and easy to cut into triangles after they cooled. Now I need a glaze recipe of some sort.

Ancho Honey Mustard Sauce

I've never been a fan of honey mustard, but adding the chili powder was great. I served this with a baked chicken nugget recipe on this site too. Great match.

Chicken and Herbs

Since I had to make this a little ahead of time, I cooked the chicken according to the recipe (less 10 minutes). Within the recipe I added chopped carrots to roast along with the chicken. Then I put it all in a large crockpot on low with 1/2 cup chicken broth, added an entire bag of lima beans, and left it on low for another 2 hours until it was time to eat. Our family loved it. He's taking the leftover to work so he can show off in front of the other guys eating fast food. Great herb mix and made with ease.

Chunky Pumpkin Chili

I decided to choose this recipe over the other pumpkin chili recipes because it wasn't swimming in sugar. It was very similar to 2 others who each had 130+ ratings. I will be taking this to a potluck luncheon and won't label it "pumpkin" chili in case that seems to scare anyone off. HOWEVER, I will be willing to share this recipe with everyone and will decorate around the crockpot with pumpkins. The only modification I did was that I doubled the chili powder and am providing hot sauce and crackers on the side. I cannot wait to hear the reviews. I'm up against some gumbo. THROW DOWN and I'm gonna win! This is an easy recipe, inexpensive and great for topping baked potatoes. To save money, make your own pumpkin pie spice. Check this website for the ingredients. :) UPDATE: The chili pot was cleaned out! Many compliments. It's a keeper. :)

Cream of Spinach Soup

Quick & easy. This took less than 10 minutes from start to finish. This is the perfect soup to make for someone that is scared of making soup, doesn't like to chop veggies, the beginner to the expert. I was excited to find this recipe with spinach. Once I started, I realized I had about a third of what the recipe called for. So I improvised by adding frozen broccoli and peas to round out the green. Once heated and added to the roux/milk mix, I used my immersion blender to puree the soup. Outstanding, thick flavor. Even forgetting to add the salt and pepper, I had three bowls of it. I can't think of any improvements needed to this recipe! Well done!

Turkey Pot Pie I

Nothing wrong with this recipe. I omitted potatoes (for the lack of) and added mushrooms and peas to take their place. I only had one pie crust, so I used it on top. Filling WAS NOT WATERY. It was thick and seasonings did not overpower. This was fun to make with my 3 year old too. Zero leftovers.

Chicken Nuggets

I was trying to find a new way to serve chicken and this was great. Two breasts of chicken fed 2 adults and an infant. Be sure and try the ANCHO HONEY MUSTARD SAUCE on this site too. It goes perfectly with this dish!

Sloppy Joe Sandwiches

I doubled the recipe and added onions because I just love onions. The longer the sauce simmered, the thicker the sauce got, so take the time and do it. My husband was drooling over this recipe. He said it was the best "manwich" he's EVER had. Guess this is a keeper.

Lemon Blueberry Drop Scones

Nothing wrong with these! I liked the idea of a drop style or scoop, so I prepared them in a mini muffin tin (well sprayed). I had enough to fill a mini tin and it left enough for 6 bigger muffin sized scones. I was in a rush, so I oped to use the tins. This is a keeper!

Spiced-Up Ranch Dip

After reading the reviews, I decided to make another version: 1 c. ranch dressing, 1/2 teaspoon chili powder, 1/2 teaspoon cayenne pepper. The salt is then eliminated! I used this to dip my Southwest egg rolls in.

Spicy Shredded Beef

I found this was a good foundation to some Tex Mex type tacos. I added an entire onion, sliced and sauteed that. I doubled the garlic. And I added a chipotle pepper to bring it more to the spicy. It was great served with flour tortillas and one of the Southwest slaw recipes on this site. Using the purple cabbage gave it color and great texture when paired with the meat inside the shell.

Amish Slaw

I was searching for a vinegar based slaw because it seems like all anyone ever makes is mayo based. I chose this because of the rating and I leave near a Mennonite community in middle Tennessee. The only thing I added to this recipe were carrots. Other than that, pretty good recipe. I may add a wee bit more vinegar for tang next round.
