Eggplant Bruschetta

This is a great idea, especially for people who are allergic to wheat/gluten. I made some alterations when I made it. First I prepared the tomato mixture: diced tomatoes, pressed garlic, basil, and the critical ingredient balsamic vinegar and allowed the flavors to soak each other up for a while. Then after prepping the eggplant I gave it an egg wash and covered it in gluten free all purpose flour and fried each piece in evoo. When all the eggplant slices are fried, layer each piece with the tomato mix. and moz. cheese and put them under the broiler for 5 minutes or so. Delicious!!! Thanks for sharing this great recipe!

Pizza Pasta

What I love about this recipe is you can adapt it to whatever you have on hand, or whatever your favorite pizza toppings are (bacon and pineapple anyone?) The combo that I think works best with this is green pepper, mushrooms, and black olives; and as with many other reviewers I replace pepperoni with Italian sausage. Sooo yummy! PS: Don't forget the garlic!

Easy Taco Casserole

I love this recipe, but as with other reviewers I made some changes for my personal tastes! I took out the mayo and used more salsa, and used taco seasoning instead of just using chili powder. Then I topped it with sliced black olives in addition to lettuce and tomatoes. YUM!!

Eggplant Rollatini

When I made this, I added some ground hot sausage in with the ricotta cheese (mainly for my Husband, and because I had no prosciutto). I also diced up the extra bits of eggplant that were not good for rolling and added them to the sauce. I Loved how it turned out, and so did my Husband - I only had one rollatini and he gobbled it all up!!
