This is a great idea, especially for people who are allergic to wheat/gluten. I made some alterations when I made it. First I prepared the tomato mixture: diced tomatoes, pressed garlic, basil, and the critical ingredient balsamic vinegar and allowed the flavors to soak each other up for a while.
Then after prepping the eggplant I gave it an egg wash and covered it in gluten free all purpose flour and fried each piece in evoo.
When all the eggplant slices are fried, layer each piece with the tomato mix. and moz. cheese and put them under the broiler for 5 minutes or so.
