Turkey Veggie Meatloaf Cups

These are so moist and flavorful. Due to personal preference I made a few changes. I used 2 lbs of ground chicken instead of turkey. I used cooked quinoa instead of couscous. I can't wait to make these again. I got my meatloaf fix and didn't crash my healthy eating lifestyle. Thanks for sharing this recipe.

Slow Cooker Stuffing

I've used this recipe for the past 2 Thanksgiving with great reviews. It makes things so much easier when the oven is tied up with the turkey. The stuffing in the bird is never enough for everyone so having this recipe makes entertaining so much easier. I omit mushrooms just for personal preference. I cooked about 5 hrs

German Beef Rouladen

My boyfriend and I are German and love German foods. One of my boyfriends favorite German dishes is Rouladen so I searched to find a recipe to try to duplicate the one his mother made while he was a kid. I made a few changes becuase when I made the recipe as written the meat was extremely tough. These are the changes I made on my second attempt. I pound the round steak out to be around 1/4 inch thick. I brown the meat in the electric skillet on all sides. I add 2 C beef broth and then enough water to have the liquid line come up halfway up the meat. I simmered in the electric skillet on 250-275 degrees for 1 1/2- 2 hrs or until meat is tender. With these changes I've perfected this to our liking.

Squash and Zucchini Burritos

OMG, this is one of my favorite recipes. I made a few changes just for personal preference. I used spicy pasta sauce instead of grn salsa, added some to the bottom of the pan. I only used about 4 oz. of cheese.

Cherry Glazed Ham

I've been using this glaze on my Christmas ham for the past 2 year and plan to use again this year. I made a few changes just because of personal preference. I omit cloves, slivered almonds and nutmeg. I add pineapple slices and maraschino cherries on the outside of the ham.

Stuffed Zucchini

I like this recipe for a base but I made some changes after making it once. I found it to be rather bland so I made the following changes for my personal preference. I substitute pasta sauce for crushed tom & condensed soup. I add garlic and italian seasonings. I top with mozzarella/Parmesan cheese. I make sure to garlic salt and pepper zucchini before stuffing. I brown the meat in a pan because I prefer to drain the fat of the meat. Bake in 9x13 for 25 minutes or until warm

Blueberry Zucchini Bread

I love this recipe and make is every spring with the fresh berries from the local farmer's market. I subsitute half applesauce for oil, substitue half flour w whole wheat flour, substitute 1/4 of sugar w brown sugar just to make a tad healthier.

Easy Mexican Casserole

Great recipe and full of flavor. I made a few changes just to make it a tad healthier & to suit taste preferences. Used ground chicken & sauteed with sweet onion. Added 1 McCormicks taco seasoning packet to the meat mixture when adding the salsa. Used reduced fat sour cream & whole wheat tortilla chips. Omitted the green onion & fresh tomato.
