Amish Breakfast Casserole

This was easy and delicious. I used mozzarella instead of cheddar because it is cheaper and monterey jack instead of swiss because my store was out. I also added a diced pepper with the onion and some chopped zucchini and fresh herbs in with the rest of the ingredients. And I used 8 eggs instead of 6 based on other reviews. I definitely think it needed the veggies. I feel like it would be all greasy cheese without them. But with these modifications it was delicious and fairly easy to put together. I don't have this kind of time in the morning with twin toddlers, so I made it the night before and reheated. I froze the leftovers for another day. Will definitely be making this again.

Sophie's Zucchini Bread

Delicious! I used half whole wheat flour and applesauce for half of the oil. I also added some fresh grated nutmeg. It was so good - moist and full of zucchini. I will make this again soon! I recommend greasing the loaf pans and letting them cool completely in the pan. One of my loaves fell apart when I tried to take it out while still warm.

Waffles I

I think these waffles suffer without yeast. They tasted stale straight off the waffle iron. They had an unpleasant crumbly texture. My kids, husband, and I were all very disappointed in these waffles.

Burger or Hot Dog Buns

These rolls are delicious and super easy! I put everything in the bread machine and then continued with step 3 on. (I warmed the milk, water, and butter on the stove until the butter was melted first.) They were soft, a little crusty, and melt-in-your-mouth tender - they made our burgers taste gourmet. I will never go back to those tasteless store rolls again. And I bet this recipe would be a great base for variations like onion rolls or cheddar rolls.

Avocado Quick Bread

Eh, I was disappointed - after reading all these reviews I expected it to be delicious. It is unremarkable in my opinion. Moist and similar to a banana bread, but not as good.

Fish Tacos

These were phenomenal! I just dipped my fish in milk and flour and pan fried. I also grilled some of it. Both were good. But the slaw mix and the white sauce are outrageous together. It made this a fantastic meal. My parents, who looked at me like I had 4 heads when I suggested fish tacos, couldn't get enough of this meal. Yum!

Cinnamon-Peach Cottage Cheese Pancakes

These were excellent! We are definitely adding them to the breakfast rotation in our house. I used 1/2 cup whole wheat flour and 1/2 cup ap flour. Also, I used frozen peaches and just diced them up really fine. My one-year-old twins couldn't get enough, and they don't like cottage cheese. Delicious!

Applesauce Bread

This bread is a HUGE hit with my family and friends. I double or triple the batch every time now because one loaf is never enough. I use half whole wheat flour and agave nectar instead of sugar. Also, I like using frozen blueberries instead of raisins because they are so juicy. But my husband likes the sweetness of the raisins. So lately I've been doing half and half and we both like that best. Great recipe!

Thousand Island Dressing II

Makes a good, basic Thousand Island dressing. Nothing special. Worked great on ruebens. This made way too much for me though. Next time I'd make a quarter of the recipe.

Corned Beef and Cabbage II

This dish came out fabulous. It was the best corned beef and cabbage I've ever had. I took the meat out and let it rest while I cooked the vegetables because there wasn't enough room in the pot for it all. Also, I thought it was ruined because the meat never seemed tender with a fork, but when we sliced it, it was nice and tender and moist.

This is a good quick and basic recipe. I found it super salty with the gravy packet. I think next time I will try to find a low sodium one. But overall it was a good comfort food meal with little hands-on time.

Irish Soda Bread

This recipe was simple, easy, and delicious! A huge hit and I will make it again soon. I didn't have enough a/p flour, so I used half whole wheat flour. Also, I didn't have buttermilk, so I used skim milk and added 1 tbsp. vinegar and 1 3/4 tsp. cream of tartar. The soda bread is absolutely fantastic. I can't rave about it enough!

This bread was delicious. The author is right, you will be glad you made so much of it! I substituted half whole wheat flour and 2 cups of agave nectar instead of the sugar. It was plenty sweet and delicious!

Banana Banana Bread

This banana bread is so simple and delicious. I love it! It's a hit every time. I use half whole wheat flour to make it more nutritious. Also, it needs a LOT of bananas. Probably 6 would do it. I always seem to only have 5. Another reviewer suggested using applesauce to make up the difference and it works great.
