Amish Breakfast Casserole

I'm not a big breakfast eater but I loved this! And so did everyone else. The only change I made to the recipe was I added two more eggs to make it go a little further. It fed 5 people, a couple of which had big appetities, and there still was a little bit left over. I would say it feeds about 6 adults. Only one warning, if you are not a cheese lover you might want to put a little less cheese - it is quite cheesy. However, everyone I fed it too loved the cheesiness.

Blueberry or Cherry Dessert

Hummus Pizza

We make homemade pizza all the time and always like to try different sauces and toppings. Everyone in my house was pretty skeptical about using hummus for the sauce but it really came out amazing! I think it might be my new favorite pizza. I didn't use broccoli but sauteed other veggies instead. I don't think it really matters what veggies you put on - it is the hummus that makes this unique.

Autumn Pork Roast

We loved this. I followed the recipe exactly except that I used cayenne pepper instead of black pepper and I added a granny smith apple. Next time I would add two apples but not put them in immediately (they tasted great but almost completely dissolved). This was a very unique dish - I haven't been this excited about a new recipe in a long time!

Gooey Butter Cookies

I made these for quite a few people and everyone liked them but several people LOVED them and couldn't get enough. I thought they were delicious and enjoyed having a very different cookie - I have never had a cookie that tasted anything like this. And as a bonus they were very easy to make!

Herbed Greek Roasted Potatoes with Feta Cheese

This is my family's new favorite potato recipe! I followed the recipe but omitted the mint since I didn't have any. They were so good without the feta I didn't bother to add it.

Blueberry Oatmeal Coffee Cake

I followed the recipe except I doubled the topping and I added 1/2 teaspoon of vanilla extract and a couple drops of almond extract to the batter. Some have mentioned that it was a little bland without flavoring but I cannot determine that since I did not try it without the extract. But I can say that with these additions it was by far the best coffee cake I've ever made. The oats really adding something to both the cake and the topping.

Rich Chocolate Frosting

This frosting is awesome. It has a milk chocolate flavor that complemented my dark devil's food cake perfectly. As others have mentioned, 1/2 of this recipe is plenty for your average sized cake.

Pesto Polenta Lasagna

This is the best thing I've tasted in a long time. I made only minor adjustments but I'm sure I would have been just as happy with the recipe as written. (however, I made my own polenta as opposed to using the refrigerated premade kind - I've never had that and I'm not sure how it compares to homemade)

Party Punch II

I made this ahead and froze it. Then the day of the pool party I let it soften up a bit, then chopped it up and served as a frozed drink. It was a huge hit with all! I don't like my drinks strong but like many of the other reviewers, I found the original recipe was not strong enough so I used only 1 2L of soda and added more rum.

Caprese Appetizer

I first made these appetizers as described and I thought they were a little bland. So I poured a little balsamic vinegar over the cheese and let that soak a couple of hours before I assembled them. They were a hit!

Chicken Piccata with Artichoke Hearts

I pretty much followed the recipe as described. It was tasty - my family enjoyed it a lot. However, I was a little disappointed since I really noticed a difference that the lack of butter made compared to a more traditional chicken picatta. I would recommend adding more butter and not using too much of the liquid from the capers.

Chocolate Toffee Cookies I

These are super easy to make; however, in my opinion, the flavor of these cookies is just OK. They don't really have a homemade cookie flavor - I assume that is due to using the cake mix. I also don't think that this particular cookie goes well with the toffee pieces - it seems to mask the toffee flavor which I love. I also tried using this recipe with peanut butter chips instead of toffee and my family liked those much better.

Italian Vegetarian Patties

I'm rating this dish compared to all foods not just veggie patties. I'm not a connoisseur of veggie patties, but I would guess as far as those go it is probably pretty darn good. I would recommend these to vegetarians; however, I'd be hesitant to recommend them to others - it didn't wow me. I followed the recipe as is. In order to get a really thick consistency as required, it took me significantly longer to cook than directed. I ended up cooking them on low without the cover at the end. This recipe makes a lot! It wouldn't all fit in my food processor. Some of it I just stirred by hand and the consistency was fine. The patties cooked up nicely (give them some time to cool so they aren't too sticky) by just using cooking spray. I cooked them on medium-high heat until browned.

Kraut Balls

I thought I would love this and when I first tasted a little bit, I did love it. But after eating one or two I was kind of turned off by them. I'm not sure what it was. I had a mixed review from my guests. Mostly they just seemed to find them so-so.

Baked Kale Chips

I think these came out like they were supposed to but I wasn't thrilled. They were very fragile and had a strong Kale taste (which is to be expected) that was a bit much for me.
