Whole Wheat Blueberry Muffins

These were GREAT! I took some suggestions, such as using 1 tsp each of baking powder and baking soda and buttermilk instead of regular. I also added 1/4 C quick oats and increased the milk to 1/2 C for extra moisture. Melt in your mouth goodness! =) UPDATE: made a second time just as the recipe calls and they were still awesome! Compliments from my whole family!

Chicken, Garlic, and Sundried Tomato Pasta

This recipe had good flavor but is VERY rich. I cut the butter in half and will probably use only 1/4 of what is called for next time. I also recommend reducing or eliminating the added salt. I will make this again, the family liked it and it was easy.

Creamy Rice Pudding

This was awesome! I made sure to temper the egg with a bit of the hot milk mixture, which helped the egg not clump up. I used 1% milk for the first 1 1/2C of milk, then substituted light coconut milk for the last 1/2C of milk. I also added about 1/4C of shredded coconut when the raisins were added. Soooo good!!

Delicious Raspberry Oatmeal Cookie Bars

These bars are great to have as a party treat when having guests over. They are very rich, so cut them into small squares. They were delicious with a dollop of vanilla ice cream on top. I also tried these with cherry preserves and they were still awesome!

No Bake Cookies III

Not a huge fan of these cookies, but it could just be my preference. I felt that they were a bit grainy. I might try them again to make sure I didn't make a mistake.

Blueberry Sauce

This sauce was awesome! The almond extract amplified the flavor of the blueberries very nicely. I used this sauce for a pancake sauce, so I used about 2 Tsp less cornstarch. This kept the topping more loose, so as to act like a syrup rather than a jelled filling. I will definitely be making this again!

Brown Sugar Meatloaf

Wonderful meatloaf!! I put half the ketchup/brown sugar on the bottom and half on top. I also added 1/2 tsp garlic powder and 1 tsp worstcheshire sauce to the meat mixture. My family loved it!

Lemon Basil Carrots

These were a great change from just steamed carrots, however I would suggest steaming the carrots instead of boiling to maintain nutrients. I used garlic powder, instead of garlic salt, to reduce sodium. Tasted great!! =)

Blue Cornmeal Pancakes

A new family favorite! The batter was a little too runny so I had to add about 2 1/2 Tbsp of extra flour. I also suggest cutting the added salt in half, because we could taste the salt. All in all, they were really yummy and hearty! Great with strawberry preserves!

Chocolate Chocolate Chip Cookies I

These were great! I made some of the batter in cookie form and made the rest into a cake pan, so I had a large cookie square. It was the best cookie/brownie fusion I've ever had. I used about 3/4 of the batter and put it into a 8X11 glass baking dish. Then I baked it for 20 mins. Serve warm with vanilla ice cream on top. YUM!!

Baba Ghanoush

So Great!! My first time making baba ghanoush and I love it. I didn't poke enough holes in the eggplant and it split in half. Also, be aware that the juices are slippery so make sure you have a good grip on it when transferring from baking sheet. I almost dropped mine on the floor. I will be making this again...but I'll double it next time! =)

Eggplant Parmesan II

This was awesome! My family loved it! I only used 1 1/2 medium sized eggplants, but used three small eggs. I baked the eggplant 10mins on each side before layering and did not sweat the eggplant. I will make this again and add fresh basil leaves to the layers next time. =) Yum!!

Cannellini Bean Salad

This is a great base recipe to use as a pallet to make something that suits your taste buds. I used one can canellini and one can red kidney beans and the roasted peppers from the jar. I also added 1 tsp of minced garlic from the jar. Made it at night and had it with lunch the next day...GREAT!

Grandmother's Buttermilk Cornbread

This corn bread was awesome! I made it as stated and my family raved about it with their mouths full. I will make this over and over again. Goes great with chili or as a substitute for a bun with sloppy joes.

Mocha Chocolate Chip Banana Muffins

I'm giving this 5 stars even though I modified the recipe. These came out with great flavor and they disappeared with friends asking for the recipe. I just made changes to make them healthier, such as using whole wheat flour, oil and flaxseed instead of butter, and cutting some of the sugar. =)

Mango Salsa

I made this as stated except I used 1tsp powdered ginger for lack of fresh. I took it to a BBQ and it was a hit. I had people asking for the recipe. Definitely is a benefit to make the night before and let the flavors blend. I will make this again!

Whole Wheat Banana Nut Bread

This was very yummy! I think the heat should be a little higher (350F), but the bake time remain the same. I had to bake at 325 for 1 hour and 15 mins. Very tasty anyway!

Italian Style Pork Chops

This recipe tasted great and was very easy! I didn't have saltines or parmesan cheese so I used cornflakes for the breading and I put shredded mozzarella on top in the last 5 mins of baking. Everyone loved them! I will make these again!

Sweet Potatoes 'n' Pears

I made this dish for my sister's family and my family and it was a tremendous hit! The pears add just the right hint of flavor and texture. I must say though that I love cinnamon so I doubled the cinnamon. Great recipe and very nutritious! I plan on adding this to our Thanksgiving meal.
