Slow-Cooker Tex-Mex Chicken

Awesome! I used all the ingredients listed but I was w/out my slow cooker (that usually never leaves my counter!) so I baked this in the oven. Here's how it went down: 1. I used 3 boneless, skinless chicken breasts (left them whole). 2. Mixed the flour, taco seasoning and corn together in a bowl along with the salsa. 3. I arranged the chicken and the sliced peppers in a lightly sprayed baking dish. 4. I poured/spread the salsa mixture over everything. 5. Baked it at 375 for 1 hour. 6. I added the mexican blend of cheese (just over the chicken breasts) with 20 minutes left on the timer. DELICIOUS. Everyone cleaned their plates! Will definitely be making this again!

Steph's Zesty Sweet and Sour Meatballs

My mom loves anything w/ pineapple so I decided and my dad loves anything w/ beef, so I decided to try this recipe :) It turned out great. I had some time on my hands while my daughter napped so I made the meatballs and put them in the slow cooker on low w/ only the liquid ingredients (pineapple juice, cider vinegar, soy sauce) and the cornstarch for 3 hours. I chopped the green pepper and about 1/4 C red onion and put them in the fridge w/ the pineapple chunks. After the 3 hrs I turned the cooker up to high for 1 hr. It helped reduce the sauce so it was thicker and gooier. I turned it back to low and added the green pepper, onion and pineapple for 1 last hour. They were delicious! The sauce was a good consistency, the veggies were still slightly crisp, the pineapple was a little tender and the meatballs had time to absorb the flavors :)

Cajun Corn and Crab Bisque

Amazing! This soup has a wonderful creamy texture and just enough spice to counter the sweetness of the corn/crab. I will definitely be making this for years to come! As another reviewer suggested, I used a can of creamed corn and cut back just a little on the milk. I also used half and half instead of heavy cream. YUM.

Banana Banana Bread

A wonderful recipe! I hadn't made banana bread for years, probably since my childhood. This recipe is straight forward and easy to make for a minimally experienced 'baker'. Lol. I did whip up a a 'powered sugar glaze' w/ milk, confectioners sugar and then (drum roll.....) PEANUT BUTTER! I'm 25 years old and had never seen nor heard of a peanut butter glaze until after I made it and then googled it. Nothing goes better with bananas than peanut butter. I suggest this to everyone who makes this banana bread now!

Easy Potato Sausage Soup

Absolutely delicious! Made this once and will continue to make it forever. I think I ate 5 bowls the first time around! I used a mild Italian sausage and chicken stock instead of water. It gave the soup wonderful flavor. Thanks for the recipe Deidre!

Sopapilla Cheesecake Pie

Wow. I wish I could give this more stars. Lol. So easy and so delicious. I followed all the measurements exactly but used reduced fat crescent rolls, 1/3 less fat cream cheese and I Can't Believe It's not Butter Light. It still turned out flaky, creamy, sticky (from the honey) and DELICIOUS. I will make this for years to come when I need a cinnamon fix :) It will not disappoint! And I think my oven is on the fritz now because I had to bake this a little longer than 30 min. More like 45.
