The Best Parmesan Chicken Bake

For the amount of time and effort, this meal *really* gets the job done. Chicken Parmesan isn't something I would order dining out so this dish isn't anything unique. I'm not even a huge fan of "Italian" cuisine. However, like I said, for the amount of effort it is certainly tasty and gets the job done and in a nutritious way. So that's why I give it 5 stars. The tomato sauce I used was flavored with garlic and basil so I was fine using dried basil. I used a square glass baking dish and used only 4 breasts, perfect size for my family. It all turned out great. This is a recipe I will definitely be able to make from memory. So while I'm at the grocery store fretting about dinner, I can easily remember all the ingredients and whip it up in no time.

Grandmother's Buttermilk Cornbread

Love it! Thanks for sharing this recipe. I am always on the hunt for a good cornbread recipe and this is it. I made it exactly as instructed and it turned out wonderful. I agree with one of the reviews that it is the perfect level of sweetness. Not too sweet, not too dry. I, too, am a cornbread snob and agree with another reviewer in that cornbread should be baked in an iron skillet. Which I did and it made this recipe all the more better.

Very easy to make and it tasted great. You could easily swap out ingredients, for example black beans for the black-eyed peas.

Crumb-Coated Chicken Thighs

GREAT use of chicken thighs. I've been looking for a good recipe for thighs since they are so much tastier than white meat. I ended up making *way* more bread crumb mixture than needed. (I even added Panko bread crumbs thinking it would help provide a crusty coating - not necessary.) Really like the Indian flavors of curry and paprika. The coating is very thin so perhaps just doubling the mixture would be sufficient. (I don't think the way it is now would cover 8 pieces.) I was concerned about having to coat the chicken pieces with some kind of egg or milk dip first, but completely not necessary. I, too, had boneless and skinless thighs so I decreased the time. I served it on top of spiced (cinnamon and clove) rice. Excellent. This is a keeper.

Whoopie Pies III

This seems to be a fool proof recipe. Loved it. For me, the convection oven worked better than traditional. And, using parchment paper worked MUCH better than directly on the pan which is stone. Even the first cookies that didn't come out looking all that good still tasted fabulous. Hard to screw this up.
