Squash Casserole

This recipe is my favorite for squash casserole and will only use this from now on. The dry stuffing mix really makes this dish. The only things that I did differently was added some garilc powder to the soup mixture, I sauted the squash and zuchinni until just tender (also added a chopped onion here) so that the bake time would be less. Also added some french fried onions to the top too! Definitely a keeper!

Chicken with Garlic, Basil, and Parsley

I thought this chicken had some really great flavor. I did make some changes/additions just because I had the stuff on hand. I think it would have been fine without them too. My additions were: I put a little chicken broth in the bottom of the dish, I added a jalepeno, minced, a little bit of a leftover onion, chopped and I used fresh basil and fresh parsley out of my garden. All of the flavors blended nicely and was very arromatic when it was in the oven. This was also a very healthy meal while still having a deep flavor. I will definitely be adding this recipe to the collection.

Angel Hair Pasta Chicken

I loved this recipe. It was easy and quick (although the dicing of the veggies did take a little bit, but so worth it), not to mention pretty healthy. I am always looking for new recipes that I can incorporate vegetables in. And that is exactly what I did... I used green peppers, broccoli, onion, fresh mushrooms and carrots. I added more cheese and broth into the end step as we like more of a "sauce to coat our noodles. Like other reviewers I also rubbed my chicken with garlic powder, onion powder, pepper and a tiny bit of crushed red pepper before I sauted it. Flavors worked really well together. Will definitely be making this again!

Sue's Hot Fudge Sauce

After looking at the other hot fudge sauce recipes on this site I decided to try this one out as it had the ingredients that I had on hand... and I am SO GLAD that i did. I was a bit apprehensive though cause most of the others called for chocolate squares and confectioners sugar. Well this one turned out just like I wanted. I halfed the recipe cause it was just four of us (and I still had some leftover) and it turned out great... I still used about 1/3 cup of cocoa though. One thing I did different was that I DID NOT blend it. THe sauce had the right texture as is... served it hot and right out of the sauce pan and onto ice cream that was over "too much chocolate cake" which is also on this website!

Too Much Chocolate Cake

This cake is delicious... it is moist and very chocolatey! I used peanut butter chips instead of the chocolate chips and it added another dimension to this desert. Also served it with ice cream and hot fudge sauce recipe (also on this site). Got great reviews from all my guests.

Chicken Parmigiana

This recipe is fabulous. My husband was really impressed, which is always a good thing! The only thing I did differently was that I added onion powder, garlic powder and pepper into my Panko bread crumbs to give the coating a little more flavor. I served this over some angel hair pasta with a side of broccoli. Also I did bake the chicken on a wire rack instead of on a pan so that both sides would get crispy.
