Tuscan Style Bean Soup

SO GOOD!! And cheap! I made a few changes. I didn't have any bell peppers and my husband's not a big fan anyway so I left those out. I used a can of cannellini beans for the beans, stewed whole tomatoes , a red onion, 2 cloves of elephant garlic and I wanted to up the protein so I cubed two chicken breasts and cooked them in the garlic and onions before adding the other ingredients. Then instead of broth I used 5 cups of water and 5 chicken bouillon cubes, I didn't have any fresh thyme so I used a heaping teaspoon of Italian seasoning. I also doubled the spinach and I used multigrain penne instead of seashell pasta because it's what I had on hand. FANTASTIC!! I could seriously eat this every week. It would be amazing with some rosemary focaccia bread.

Banana Chocolate Chip Cookies

Great recipe!! I made a few changes. I was out of butter so I substituted butter flavored shortening. I cut the baking powder down to 1 tsp. Instead of a cup of white sugar I used 1/2 cup of white sugar and 1/2 cup of brown sugar. I upped the vanilla to a teaspoon and a half. Added dark chocolate chips, crushed walnuts, 1/2 tsp of nutmeg, 1/2 tsp of ground cloves and a half tsp of cinnamon. Mmmmm : ) I think I've found my go to recipe when I have overripe bananas!! : )

Make-Ahead Vegetarian Moroccan Stew

Sooo good and healthy!! My husband and I loved this and so did our 2 year old and 8 month old! I made a couple of slight changes. I used 3 small potatoes instead of 3 large potatoes and added a diced golden delicious apple (Peel on). I also added a little less than a tablespoon of brown sugar and a pinch of table salt. I seasoned it pretty generously with black pepper and added a little more cinnamon. Amazing! Will be making this on a regular basis! My husband and I both agreed it would be fantastic with a little ham in it so I'll try that next time! Also a nice loaf of crusty bread would be great dipped in it! Mmmmm : )

German Pancake

I was disappointed with this recipe and I LOVE German Pancakes! I didn't make the syrup because I like them best with just a bit of powdered sugar on top, but I found the pancake to be too egg-y. It also took almost 40 minutes to bake. At 30 minutes the batter was still full of runny eggs. It looked pretty disgusting. Once it cooked it was tolerable but I won't bother making it again. My Better Homes and Garden cookbook has a much, much tastier recipe!
