Baked Fried Eggplant

This recipe is almost as good as the fried style but without the grease. It's less time-consuming also.

Jambalaya II

My Louisiana-born daughter-in-law gave it rave reviews. I think it's the chicken-sausage broth that helped make it so tasty. I'll be fixing this version often in the future.

French Toast Souffle

I fixed this for Easter brunch. What a hit it was! I've made several types of French Toast casseroles but this one is decidedly the best. I served sausage,bacon, and melon as accompaniments.

Baked Fish with Shrimp

Wonderful! My husband and our dinner guests raved about it. For the fish I used Tilapia and since I had large shrimp on hand, I cut them in thirds.

Oklahoma Cheese Grits

I've been making garlic cheese grits for years. The Worcestershire and hot sauce are great additions. My family loved this new enhanced version. Oops, I made an error when I clicked on the rating stars.

Easy Dump Cake

Oven-Fried Pork Chops

I followed another reviewer's advice and used Yogurt mixed with the egg. I too used Italian seasoned bread crumbs mixed with a little grated Parmesan. My family loved these chops.

Impossible Coconut Pie II

I've been baking this pie for 35 years. It IS wonderful. I noticed serveral folks commented that it took longer than 45 minutes to bake. My recipe says to bake the pie for 60 minutes at 350, not 45.

Chicken In Basil Cream

Definitely a keeper! I used Italian seasoned bread crumbs, fat free half & half (instead of heavy cream) and a mixture of Parmesan, romano and asiago cheeses (instead of just parmesan). My husband loved it.

Incredible Punch

I thought it was a bit too sweet. Since I couldn't find raspberry gingerale, I used plain gingerale. I used more than called for to lessen sweetness. Next time I think I'll try either raspberry seltzer.

Sauteed Portobellos and Spinach

Absolutely wonderful! I followed the suggestions of Sara L. My husband, who's not a cooked spinach fan loved it. 2 bags of fresh spinach barely served 4 so I'd increase that next time.
