Italian Sausage Soup with Tortellini
Made this the night before a carry-in at work. Excellent! I used 2 cans of petite diced tomatoes. I was worried about the salt content and quantity of broth, based on other reviews. I used one 32 oz carton of Kitchen Basic NO SALT beef broth and 8 oz of another carton regular salted beef broth. I ended up adding the remaining 24oz, because it really did absorb quite a bit of liquid overnight. Between the two cartons, did not feel it was too salty at all. Yummy.

Oven Stew with Burgundy Wine
Very good flavor. Added an extra 1/2c wine and water, each. Though it didn't completely dry out, there was very little sauce. Added 8oz of sliced mushrooms and 2 potatoes. Used Pinot Noir wine in place of Burgundy. Will double (at least) the fluids next time, but great otherwise.

Fettuccine with Sweet Pepper-Cayenne Sauce
This was a quick dish to prepare and has great potential, but man is it HOT!!! Too hot, in my oppinion. Only one out of 3 were able to actually eat a whole portion. I will try again with half the amount of cayenne.
