Apple Dumplings with Rich Cinnamon Sauce

OMG, these are amazing! I don't like crust on pies, I usually just eat the filling, but the crust so works with this! Use Granny Smith apples for sure. Follow the recipe exactly, it's perfect. And it was very easy to make-this coming from someone who does not like to bake. My step-son called me, after coming over just to get leftovers, about how amazing these are. Do you know how rare that is?!? LOL Fiance loved them as well, they were the "best apple dumplings he's ever had." You have to try this recipe, period.

The Neely's Macaroni and Cheese

The sauce was very creamy and cheesy, but pretty flavorless, except for the after-bite. It did have some heat, but no initial flavor. Perhaps the bacon is supposed to give it its flavor, and I did use soy bacon. Fiance liked it, but didn't love it. Very good, rich, hardy comfort food but not as much flavor as I like in my mac and cheese. Maybe next time I will add some shallots and garlic, etc.

Taco Meatloaf

I don't eat meat, but my fiance does. He said this is good, but he would go even further and put tomatoes, lettuce and cheese on top of the finished product, since it tasted like eating taco filling anyway. I did use 80/20 meat instead of 90/10, and while the loaf was not dried out, it also had lots of standing grease I had to get rid of 1/2 through cooking.

Lemon Pepper Peas

I assume I didn't use enough spices, but both me and my fiance both agreed these tasted like peas with butter. Maybe if they were cooked longer in the spice, and not microwaved. I will use more spice next time, if I make them again. But mostly I'll just make peas with salt, butter and pepper. Simple is sometimes best.
