White Chili

Recipe is okay. At the end, I had to add about a 1/2 can of tomato juice and 3/4 cup water because there was no liquid left in the pot (dont add too much tomato juice, you dont want a red sauce). I used pepperjack cheese as well, which melts great in this - and I served it with Lime Tortilla chips.

Broccoli Salad I

Makes a good side dish..I like to use red onions versus green..and I skipped the raisins and added cranberries. ..the sunflower seeds are a must.

Crab Quiche I

Not bad... Pretty simple flavorful quiche.. If you want the cheese in quiche to not be so blended in with the mixture, a trick is to throw a few tablespoons of flour on the cheese before you mix it into the egg mixture..when you cut open your quiche, you will have nice hot cheese pockets.

Sophie's Zucchini Bread

Made one loaf and 3 mini - Cooked for 50 minutes for the 3 mini, and 55 for the big loaf. Excellent. Moist and Delicious. (Didn't add the nuts because I have young children)- Will make again. (Also, I added mini chocolate chips- yum)

Busy Day Chicken Rice Casserole

It's a mystery to me why this recipe is so highly rated. I consider myself a decent cook, and this was a total flop. First of all, the cooking time is off.. My rice was hard and crunchy after the noted time. I had to cook for an add'l 30 minutes on increased temp. Secondly, its so bland! There is absolutely NO flavor.. The rice absorbs all of the soup, and there is no flavor left. There is no creaminess- Its just mushy rice with chicken.. Sorry! I am staring at it trying to figure out how I am going to re-coop this dish for dinner... ( I even added extra bite size vegetables before cooking.. )- Just isn't working for me!

Banana Banana Bread

OMG... Excllent and moist! I doubled the recipe, making 1 big loaf and 4 mini.. Followed recipe to the tee, except my baking time was only 40 minutes.. Could be from my convection oven, but don't assume it will take 60 min's to cook.. Mine is super moist and fab-- Added crushed walnuts...

Slow Cooker Beef Stew IV

Yum ! I made a few changes.. added sweet potatoes instead of regular potatoes.. I also added a squirt of ketchup, and a squirt of worchester sauce. (dont know why, but i just did) and it turned out phenomenal. It DOES need the full cooking time.. so plan for that.. it won't be ready any sooner!! But so worth it!! The meat comes out so tender and full of flavor.. excellent recipe--

Chocolate Chip Muffins

Mine did not turn out very well, but in fairness to the recipe maker, i used splenda instead of sugar.. and whole wheat flour.. sometimes these changes don't take well to a recipe.. TRIED AGAIN..... followed recipe - use 1 cup milk, 2 eggs, and real sugar.. they are fabulous! But they do need the extra ingredients to keep moist..

Classic Macaroni Salad

Perfect recipe for a crowd.... ! I used splenda instead of sugar (and i didnt add the full amount of splenda either).. and save a little of the mayo mix to add just before serving.. it refreshes the salad if you made it earlier in the day for a party.. just toss the leftover mayo mix in just before you eat.. goes so well with bbq chicken! My dinner party loved this one..!

Baked Whole Cauliflower

I probably shouldn't be rating this particular recipe because i changed it .. but here are some suggestions.. mine came out fantastic. cut the cauliflower into floweretts, steam until 3/4 way done.. drizzle with evoo.. in seperate bowl mix panko bread crumbs, fresh parmesan cheese, and just a few tblspns of canned parm cheese.. toss with cauliflower and bake for 20 miinutes on 375 or until golden brown.. absolutely fantastic.. !

Daddy's Popcorn

Yum Yum ! I agree with using FRESH kernel popcorn (vs. stale popcorn that has been sitting on your shelf- makes a big difference)- I omitted the butter .. but did everything else the same. OMG, I can't stop eating it.. You will never go back to the microwavable bags!

Vegetable Filo Pie

Very good base for whatever vegetables you want to use.. I used zucchini, mush, onions, chopped steamed brocolli and it turned out fantastic. .. This will be a staple in my house. I also ommitted feta and used Spanish cheese instead. AND, I used 4 beaten eggs and baked for 40 minutes.

Veggie Burgers

The recipe is a good "starter" for a veggie burger. First of all, if you cook them in a skillet (with a turn of olive oil), they will completely fall apart. I am trying a second batch, making the patties a LOT smaller, and thinner to avoid the breaking apart, and it's not working. I also added more egg and that didnt work either.. They WILL fall apart and not stay in a "patty" (unless you completely immerse them in olive oil, which is not my idea of a healthy veggie burger). Secondly, it needs seasoning. They are bland. If bland is what you are looking for, then don't add any spices. If you want flavor, add more salt. You can't taste the garlic- so add some zip of your choice. Lastly, this clearly does NOT taste like a burger.. I dont want people to be mislead.. It IS a veggie burger and will not "mock" the taste of a hamburger. All in all, they are quite delicious if you tweek the recipe a bit. I am doing CORE for weight watchers, so its a great staple to have. You will need to play with the recipe a bit to get it to your exact liking.. Like I said, good starter.

Chicken Florentine Casserole

I made this recipe last night because I am sick of making boring chicken breast..I have to say it was really good .. even my PICKY husband liked it.. ! I used fresh spinach (sauteed it first to steam, frozen would work too.. but I am not a fan of canned)- I also had a big portobella mushroom i wanted to use, so i diced that and used it instead of regular mushrooms. I basically did what the recipe said except I noticed the top was browning faster than the casserole was "bubbling"- so, i covered it, turned it down to 375 and baked a little longer.. I wanted the casserole to bubble a little more to blend all the flavors.. Excellent with a side of angel hair pasta. .. Staple in my house.. and was very easy to make !
