Awesome Sausage, Apple and Cranberry Stuffing

The recipe came out very well. I added an extra cup of turkey stock. The moisture is great. I used left over fresh cranberries which worked fine. I have a Honeycrisp apple on hand. I for got to add the egg as suggested by some. I used dried herbs. The reason it got 4 stars is I thought the overall ratio of "stuff" to bread was too great. Oh I used hot sausage, and that is great in it.

Mocha Chocolate Chip Banana Muffins

Easy and turned out great. I made several changes, based on what I had on hand and diet choices. I used half the margarine called for. I only had one banana. I doubled the instant coffee. I used only 3/4 cup choc chips and also cut the sugar to 3/4 cup. It is still plenty sweet and I'll cut more sugar next time. I used 1c whole wheat flour. Should have stopped at 1c reg flour. Needed to add 1Tbs half/half after adding that last 1/4 c flour. I added 2Tbs flax seed meal and 1Tb wheatgerm. Looking forward to trying with more banana. They were a bit crumbly, but perfect with a glass of milk! I'm an amateur anyway!! Hope this helps!

Spinach Chicken Pockets

Easy and fast. I made these changes because it was what I had on hand... I baked fresh rye bread this week so I spooned the mixture on top of my bread. I didn't have onions or cucumber, so I skipped that. I added salt, more cumin and cayenne once I tasted the mix just to give it more pop. My yogurt measurement could have been off - I had an individual size on hand and threw the whole thing in. Oh, I also had cooked some extra chicken breasts and had them in the freezer, so I defrosted those. And I used frozen spinach that I heated up with the chicken, and then added the sauce and heated that up as well. I thought it was great. Hope this helps.
