French Coconut Pie
Freaking awesome. After reading the reviews- here's what I did: added a splash of vanilla and a handful of mini chocolate chips. I only did 2 cups of sugar. The amount of coconut is just right. I cooked it up in 8" pies- set up very nicely after the 45 min cook time. The chocolate chips really add a ton to this pie. My SIL said it reminded her of an Almond Joy bar. What I will do in the future- add even more chocolate chips. I will try a half cup more pecans, and maybe try toasting them ligtly before adding them to the mix. They get lost in the coconut and sugar.

Slow-Cooker Pepper Steak
Awesome. Great recipe- no changes needed. I only made it once and it's already a favorite in my house.

Apple Crisp II
Although still an excellent dessert I had problems with the recipie. I halfed the recipie to an 8 x 8 dish. I ended up with soup- does the type of apples make a difference? I used 75% crisp apples and 2 soft ones. I DID NOT half the topping recipe and still barely had enough to cover the 8 x 8 inch pan. Not sure, but I think I missed something. Will definitly still make this recipie again and try less or no water and different apples. I thought it was too sweet as well, but didn't rate the recipe on this since I think that is a matter of personal taste.
