Theser muffins really are a great starting point, and per the reviews of others I did make some changes. Used no oil, less sugar (only 1/4), less baking soda (1/2 t), only 2 large bananas, only 1/4 c apple sauce, and added the following: 2 T ground flax, 1/4c quinoa flakes, 1/2c oats, 1t baking powder, 1/2c strawberry yogurt, 1/4 agave, 1/4t pumpkin pie spice, and 1/4t cardamon (in addition to the cinnamon already in the recipe). All other ingredients remained the same. Ate one right out of the oven (yum!) and let the others cool and stored in a lidded container to keep moist. Still seem to be lacking something... might add a tad more salt next time.
