Roasted Pumpkin Seeds

Rather than boil in salt water per suggestions, I only changed up a bit by putting the seeds in a skillet with butter, ovoo, and sea salt. Stirred enough to heat through, then baked. Perfectly delicious!

Spaghetti Squash I

As all of my veggies were straight from the garden, this was a great way to enjoy the abundance of the season! I didn't have any olives or feta, but did have some extra green peppers. I also added sea salt, red pepper flakes, and some Braggs seasoning (not liquid aminos, but the dry type) and some nutritional yeast (has a cheesy flavor). It turned out amazing!

Home-Fried Potatoes

Love these! I use a cast iron skillet - seems to crisp things up better than others. No onion or peppers; no boil; I usually use Yukons b/c we love them sooo much! I peel and throw all of the seasoning in the bowl with the peeled potatoes, them throw them in the skillet. Because I don't like to boil them first, the fry time takes a bit longer than this recipes call for, but awesome nonetheless! BTW... I use a great Mediteranean sea salt seasong from McCormick! Makes these even more wonderfull!!

Shrimp Scampi V

This was fabulous! I used 1/2 butter, 1/2 ovoo (and about 1/4 less of both), 1/2 white cooking wine, 1/2 fresh squeezed lemon juice, dried sweet basil, savory sun-dried toms, didn't have angel hair so I used thin spag... it was execellent and I will be making it again! Thanks for the recipe!

Cream Cheese Pound Cake III

WOW! I used this recipe to make the Lemon Curd Trifle with Fresh Berries (Tyler Florence) .... it was amazing! Lots of raves about the whole thing... definitely not for the everyday - but for special occassions, it's worth every calarie and fat gram!

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

Theser muffins really are a great starting point, and per the reviews of others I did make some changes. Used no oil, less sugar (only 1/4), less baking soda (1/2 t), only 2 large bananas, only 1/4 c apple sauce, and added the following: 2 T ground flax, 1/4c quinoa flakes, 1/2c oats, 1t baking powder, 1/2c strawberry yogurt, 1/4 agave, 1/4t pumpkin pie spice, and 1/4t cardamon (in addition to the cinnamon already in the recipe). All other ingredients remained the same. Ate one right out of the oven (yum!) and let the others cool and stored in a lidded container to keep moist. Still seem to be lacking something... might add a tad more salt next time.

Actually Delicious Turkey Burgers

Very tasty and moist! I followed other reviewers as well - used only 1 egg, 1/2 tsp smoke flavor, 1/2 tsp worcestire, 1/2 tsp tamari... made on the Foreman and turned out 10 very delicious patties. Definitely a keeper!

Classic Waffles

These were very tasty! Perfect as is... and very close to Mark Bittman's recipe (which has been my favorite for some time.) I only had xl eggs and inadvertantly used 2... still tasted great, but next time I'll use either 1 or be sure to have large.

Simple Scones

I have made these scones now for what seems like forever! My kids love them, their friends love them, I love them... I never add anything to them, and the only changes we've made is to add 1 or 2 tsp of vanilla and changing up the amount of sugar depending on what I'm using them for. Great recipe!!!!

Best Chocolate Chip Cookies

Awesome cookies- I had a recipe similar to this sometime ago, but lost it. Thanks so much! I did take the advice of others and decreased the white sugar, increased the brown, plus used 1 tsp of salt rather than 1/2. Helps with the bland taste. Thanks again!
