Creamy Chicken and Wild Rice Soup

Reviewed: Oct. 3, 2013
This was super tasty!!! The only change I made was adding 1 1/2 C of chopped New Mexico roasted green chile, and 1 t of garlic powder. My Husband loved it, and is looking forward to when I make it again. I did thin it out a bit with milk, since it thickened considerably by the time I put the leftovers in the fridge. This is a keeper! Thank you Stephanie G.

Excellent! Excellent! I mix it up from time to time. From adding some basil, rosemary, or marjoram! I have even tossed these in the crock pot, and let them cook about 45 min before serving! Beautiful little pillows!! Thanks for sharing Carol!

Butternut Squash Bisque

Reviewed: Aug. 12, 2013
I wasn't impressed. Followed the recipe to a T. I even had the Hubby help cut the squash. :-) It needed something still. I even added some cinnamon along with the nutmeg. I shall just keep on looking for that perfect butternut soup recipe. I shared with my Mom, who agreed that it needed something more. Thanks anyway Phonelady55

Fresh Southern Peach Cobbler

Reviewed: Jun. 29, 2013
Being married to a Southern man, it has been hard to find a good peach cobbler recipe. This is my go to recipe now. It's so good that my son wanted this for his Birthday party instead of a cake! I do kick up my brown sugar to 3/4 cup tho. they like their peaches on the sweet side. I up my nutmeg to 1/2 tsp & cinnamon to 2 tsp. other than that nothing else. Thank you asposey for sharing!

Chef John's Pineapple Upside-Down Cake

Reviewed: Apr. 27, 2012
I did not care for this. I felt that I wasted good Rum & Pineapple on this. Sorry Chef John, but this was just not good. Dry as the desert that I live in.

Gourmet Sweet Potato Classic

Reviewed: Dec. 1, 2011
I made the mistake of making this for Thanksgiving. Sorry but it was not all that the reviews give it credit for being. It was only served once. I had 1 guest even look at it funny. Maybe if I added a bit more sugar? It just lacked something. Needless to say it went the way of the Dodo. I will not be wasting sweet potatos on this again.

Too Much Chocolate Cake

Reviewed: Aug. 30, 2011
This cake is down right rich & evil! I finished it off with a chocolate ganache, and chopped pecans. I used the mini bittersweet chips. Next time I will use the dark chips. This has to be served in thin slices cause even a real choco-addict finds it very rich.

Minestrone Soup

Reviewed: Aug. 30, 2011
This was a decient soup, I changed the amount of garlic to 3 large cloves, and less oil. I did not add the cheese. Next time I'll not add the potates, and I will add some beans, maybe black beans for more color and protein. My husband and youngest son thought I lost my mind and were wondering where the "meat" was. My eldest son didnt like the potatoes. I had went a bit crazy at the Farmer's Market and this was a good way to use what I picked up! Will make again.

OH HOLY COW!!! These were outstanding!! I served these New Years eve and they blew the $50.00 bottle of Gruet Champagne out of the water! I used Patron Citronage, and Turbinado sugar! There were requests for these for brunch!! Alas I was out of champagne... will definitely make again! This recipe is a keeper!!

Chocolate Bourbon Pecan Pie

Reviewed: Dec. 17, 2010
This pie was amazing! I doubled the recipe because I needed 2 pies for a work pot luck. I used Makers Mark which really made the flavors wake up, and I poured a 12 oz bag of Toll House semi sweet chips into my melted butter mixture. I have had Chocolate Pecan Pie disasters in the past. I find that this doesn't leave you with the hit or miss of flavor thing that has plagued my pies in the past. I used jumbo eggs which has always been a preference. I did end up making an extra pie crust and had 3 pies! I am so glad that I did too! This pie was the hit of the pot luck and I now have everyone convinced that I am quite the Gourmand! This is a keeper!

German Chocolate Pecan Pie

Reviewed: Oct. 29, 2010
This was ok but not the wow that I read in the reviews. Next time I will melt my choco chips and incorporate them into my syrup mixture. Since I was left with whole chips. I was embarrassed when it came time to serve this one. My guy's ate it but it didn't fly off their plates.

Kalua Pig in a Slow Cooker

Reviewed: Oct. 29, 2010
Since I cook for hard core meat eaters this was so easy, and so tasty it leaves me speechless. I used a 10 lb pork butt that I have cut special. I had to bump up the smoke to "a generous coating" around 4 T.! Haha! I did add fresh ground black pepper and rubbed it in. After shredding the meat I did add more smoke, maybe 6 more shakes. This was Magnifico!! I am yet to have leftovers pass lunch the following day!!

Cinnamon Swirl Bread

Reviewed: Oct. 29, 2010
This bread was a hit! I added 1 t of vanilla to the milk and cut back my 1/3 c sugar to 1/2 c. I prepared it in an 8" round pan. I served this for Saturday breakfast. I was making the second batch less than 2 hrs later! I made a cream cheese frosting at the request of my guys and frosted it while it was still rather warm!!! Made a rabbit hug a hound! This is a regular staple now! I Thank you & my guy's Thank you, Bettina!!

Cowboy Skillet Casserole

This was a disaster. Wasted so much meat I used 2 lbs. My family did not eat it. They tossed it to the dog and ate left over pizza. It will not make my keeper list. Sorry...
