I am all about some good comfort food and yummy desserts but I have been leaning more towards the side of trying to be more healthy. I have stopped drinking pop (or soda as some of you may call it) and been working towards maintaining my weight. I have not had a pop since December 2012.… MORE

About this Cook
I am a displaced military wife, finally putting down some permanent roots back in my hometown of Cincinnati, OH. In 7 years my family has moved 6 times!! In my years of moving, and all the different duty stations, it has made me a more diverse individual and eager to try new dishes. Finding authentic food items is a bit easier when you have a Jungle Jim's to frequent :) My name is Emily. I have two beautiful children and a wonderful husband. October 11, 2008, my husband was combat injured in Iraq. He was shot in the face by a sniper. We are a blessed family! He is still with us today. Because of the challenges our family has faced it has caused me to find more dishes that fit our new lifestyle and are quick to make. My husband has traveled the world and eaten many different types of food but always comes back to mine!! Nothing like some good home cooking :)
My favorite things to cook
I love to bake!! Some of my favorite things to make are pumpkin bread and pumpkin pie but I also just love to cook period. I love to create my own dishes and try them out on both my husband and my co-workers.
My favorite family cooking traditions
Family traditions are a pretty new thing for my family as we are still in the process of creating our own. One thing I am big on is spending as much time with family as possible!! I think something important when having family get togethers is good food. Food always seems to bring people together. My kids, husband and I always make cookies before the holidays. One of the new traditions I want to start is going down to a local homeless shelter and helping to feed them dinner. I think it is important for my children to see humility and generosity.
My cooking triumphs
I have burnt my share of dishes over the years!! Made the smoke alarms go off and even caused us to go out for dinner when a dish didn't turn out so well.

Yummy Sweet Potato Casserole
I am not a fan of sweet potatoes but I am now!! This was amazing and my Thanksgiving guests gobbled it up leaving me with very little for leftovers. I made only minor changes....instead of fresh sweet potatoes I used 2 cans of yams that I microwaved for 10 minutes and then mashed, used regular milk, doubled the topping (added a little more brown sugar to topping) and still added marshmallows on top of it all. This will be my new family tradition added to every holiday meal.

Juicy Roasted Chicken
This chicken comes out so moist and tender-heaven on a plate. My husband and kids request this meal often. My only additions are minced garlic and pepper into the cavity of the chicken along with potatoes, carrots and onions scattered on the outside. I also sprinkle some additional onion powder on top of the chicken with pepper and minced garlic. During the last 30 minutes of cooking I will generally add some baby portabella mushrooms (you don't want to add them at the beginning of cooking because they will shrivel up and loose flavor). This is a keeper that I will add to the family recipes :) Thanks!!!

Better than cool whip!!!! Love it :) Everyone keeps asking for my homemade whipped cream.
