Why I LOVE Mac & Cheese

There are so many possibilities with mac & cheese! You can add as little or as much stuff to it as you want. I like my mac & cheese on the cheesy side! Tonight I made some on the fly for Michael and I. I often use cheddar, cream cheese, velveeta or monterey jack cheese-when you put them all together...WOW! I still want to try some other cheeses from around the world....my local Jungle Jim's will be a good place to find what I am looking for since we now have the largest international market :) 

The best part is my kids love it and the cheesier the better!! 
If anyone has a good idea for different cheeses let me know! I will post up the Mac & Cheese recipe I used tonight. Happy cooking!! Off to make a cake for bosses day lol.

I am with ya! Love mac n cheese! I tend to make to many noodles and not enough sauce.... I love cheesey, too!!!!!

Just read your Bio....I grew up an hour south of Cincy in Lexington. Glad your hubs is OK!!!!!!!!

I have discovered the joys of Colby cheese for its melting charms - love it! So very creamy.

I have never tried Colby....sounds like I will be adding that to my grocery list :)

About Me
I am a displaced military wife, finally putting down some permanent roots back in my hometown of Cincinnati, OH. In 7 years my family has moved 6 times!! In my years of moving, and all the different duty stations, it has made me a more diverse individual and eager to try new dishes. Finding authentic food items is a bit easier when you have a Jungle Jim's to frequent :) My name is Emily. I have two beautiful children and a wonderful husband. October 11, 2008, my husband was combat injured in Iraq. He was shot in the face by a sniper. We are a blessed family! He is still with us today. Because of the challenges our family has faced it has caused me to find more dishes that fit our new lifestyle and are quick to make. My husband has traveled the world and eaten many different types of food but always comes back to mine!! Nothing like some good home cooking :)
My favorite things to cook
I love to bake!! Some of my favorite things to make are pumpkin bread and pumpkin pie but I also just love to cook period. I love to create my own dishes and try them out on both my husband and my co-workers.
My favorite family cooking traditions
Family traditions are a pretty new thing for my family as we are still in the process of creating our own. One thing I am big on is spending as much time with family as possible!! I think something important when having family get togethers is good food. Food always seems to bring people together. My kids, husband and I always make cookies before the holidays. One of the new traditions I want to start is going down to a local homeless shelter and helping to feed them dinner. I think it is important for my children to see humility and generosity.
My cooking triumphs
I have burnt my share of dishes over the years!! Made the smoke alarms go off and even caused us to go out for dinner when a dish didn't turn out so well.
