Catfish Etouffee

We tried this with tilapia instead of catfish and with some shrimp added at the last few minutes of cooking time. I also soaked the tilapia in salt water and milk to reduce the fishy taste. It was pretty GOOD to us! Thanks for the recipe

Cucumber-Avocado Salad Dressing

It's ok. I do agree with the others that say this is lacking something. The flavor is a little light. It reminds me more of a light flavored guacamole. A day later I thought that maybe onion powder could boost the flavor (it helped a little-not much). The only reason I would even consider making this again is to save money on the avacados-because the cucumber helps to stretch the mixture.

Kim's Macaroni Salad

It was alright, but it had too much of a mayo-like flavor. We tried it a day later and it tasted better but then the macaroni soaked all the sauce. I would not make this again.
