My favorite things to cook
My latest challenge is cooking for a diabetic. The good news is since I have been cooking healthy and sugar-free we have started losing weight! So that is a positive spin on the negitive!
My favorite family cooking traditions
Our Christmas gumbo! This tradition started with my grandmother then went to my mom and now it's my turn!
My cooking triumphs
My balsamic chicken and chicken tacos. Both were created when groceries were low. I used what was on hand and the rest is history!
My cooking tragedies
Mixed berry muffins - horrible - the receipe needed more sugar than what it called for. I should have stuck with my instinct and added more! Chinese cabbage with sesame oil - ugh! My biggest downfall? Biscuits and cornbread - "I just can't do it, Captain"

Navy Bean Soup I
Awesome soup! I used left over roast beef gravy plus added chicken broth to equal the 6 cups it was about 2/3 & 1/3 respectively. It was OMGoodness good!! I also used smoked hog jowl and hickory smoked long link sausage (1 lb) because that is what I had on hand. The sausage was added towards the end. Try it beef gravy!

Favorite Old Fashioned Gingerbread
Used splenda instead of sugar, and only about 3/4 cup of molasses since all I had was blackstrap and it can be a bit stronger. However loved this! Will try the applesauce next time, just to see how it comes out. Everyone in the house had to sit in the kitchen with hot cocoa and wait for it to be done! I didn't have to worry about it drying out - caught my hubby snatching the last piece just before bed!

Thighs on Rice
Good receipe. Made some changes though... I took other folks advice and added garlic, onion, bell pepper and spices of my choice (red pepper flakes, cayenne pepper & bay leaf). I also used brown rice and added a can of cream of chicken (try mushroom maybe next time) to the fluid mixture for rice. Also browned the chicken before placing in the casserole dish.
