Haddock with Citrus Salsa

I was hoping that this would make a wonderful meal for our dinner, I was wrong. I did not care for this very much. The spices used on the Haddock seemed to work against each other. Also the lime used in the salsa was way to strong. I had to fix this quick. I added about a cup of orange juice, sugar, white wine and flour and made the salsa into a sauce. I had to keep readjusting the recipe's salsa until I got the flavor just right. I don't know about the salsa itself, but I just didn't like it. My husband who loves Haddock also agreed, something was wrong with the salsa and suggested to try this again and I will. I love Haddock and maybe in my haste, I missed something or failed to follow the instructions completely. I'll give this another shot and see what happens.

Honey Lime Chicken Wings

I love chicken wings, so I made this for dinner tonight as a treat. I can't say enough about it. I enjoyed the sweet and sour taste and the texture of the wings! I have a breading recipe that I always used when I use to fry chicken and the flavors were awesome! This was quick and easy and my family enjoyed it! I will make this again! Thanks for the recipe!

Brown Rice and Black Bean Salad

This was great! I didn't have canned collard greens, but I had some fresh greens. So I prepared just enough for the salad. I used some left over white corn, used black and green olives, (Didn't have any green chiles). I already had some left over brown rice, used it and mixed everything together and oh my Lord, this was great! I love collard greens and so does my husband! This came out so great....and then it hit me, I forgot to add the left over black beans and the Italian tomatoes! Not to worry, we had some of the salad left over, I'll add these last two ingredients for lunch and really enjoy! Thank you for this recipe! I must make this for company when I host another dinner party! What a wonderful alternative for many items I like! This salad really rocks!!!!

Avocado Lime Cheesecake

Excellent, excellent, excellent! I have found another way to prepare avocados! I made this tonight and because I didn't have an ice cream machine, I followed the advice of some of the other members and froze it! After dinner and cleaning up the dishes, I took the pie out and cut two slices for myself anf for my husband. We both enjoyed this so much and I have a feeling this won't last long! I used a prepared graham cracker crust that I had, followed the ingredients and all I can say is WOW! The only thing I might do different when I make this again is probably add a little more cream cheese and perhaps some vanilla extract. I used light cream and liked the taste! The avocados I used were slightly over riped but they worked just fine. I will purchase fresh and ripe avocados the next time and really have great pie! Thank you for submitting this recipe! My grandson loves avocados and I do believe he will like this as much as we did! Thanks again! This is a keeper!

Avocado Dessert

I have always wanted to try eating and using avocados and always strayed away from them, but when I read this recipe it sounded interesting and I decided to give it a whirl. I had one avocado handy and followed the recipe exactly! I loved it! I was so excited about the taste that I decided to make this again for a great snack in between meals! I wouldn't change a thing! I might add more vanilla extract, but the flavor and the consistency to me was great! Thank you so much for this recipe! I am now a firm believer in using avocados for other various dishes! I will be making this again! I truly enjoyed this awesome dessert!

Oatmeal Baked Chicken

I recently prepared this recipe for dinner and I honestly have to say, "It was great!" After I mixed all the dry ingredients together, I used my hands and worked the oatmeal until it had the consistency as flour. I rolled the pieces of chicken in the milk bath first, then rolled each piece in the oatmeal coating. The coating held fine. No problems whatsoever. The only thing I changed was not using the butter. Instead I used a non-stick spray very gently covering the chicken and let it cook! The chicken came out juicy and tasted great! I didn't mind not having a crunchy taste to the chicken, that didn't matter. The flavors, the spices were excellent! I loved it! I had to watch the time, as the coating began to turn slightly dark, so that told me check it to see if the juices ran clear and they did so otherwise no problems! As it was cooking, the smell was making us hungry and we couldn't wait! I will make this again and try using Soy milk or coconut milk. One reviewer mentioned honey...gotta try that next. I truly liked the spices (could be a little hotter...add more chili powder). I will be making this again. My husband loved it! This will be made again and I will add this to my recipe box...it's a keeper! I had a taste for "Fried Chicken" and remembered I'm trying to cut down on fried foods, this was a wonderful alternative! Some of the suggestions got me thinking to "change up" when I prepare this again. Thank you for the recipe! Five Stars!
