Sweet Potatoes with Poblano Butter Topping

This was really good. Used Best Life fat-free margarine and seeded and roasted my poblano. Excellent on a sweet potato!

Carrot Burgers

These were great! I shredded my carrots- microwaved them til soft-substituted celery salt for celery and salt-olive oil cooking spray and used eggbeaters. No bun needed- shocked how enjoyable and quick these were.

Barbie's Tuna Salad

I was surprised at how good this was! I love fresh tuna...but gag at canned, so this is REALLY a good recipe. I did change it a bit--less mayo and dill--more sweet relish and fresh onion. It's a keeper!

Avocado Quick Bread

This recipe really peeked my curiosity. I omitted the raisins and didn't have buttermilk but did the milk with a tbls of lemon juice thing and it came out beautifully. This bread comes out looking and tasting wonderful. The bread has just the right amount of density and looked good enough to give as a gift.

Acorn Squash Soup

This was YUMMO! This could even serve as a rich sauce! I did some minor changes...no celery so used celery salt and omitted reg salt. Doubled the curry...used reduced sodium and fat chicken broth and subbed fat free 1/2 & 1/2 for the evaporated milk. Wonderful!

Carrot Rice

This is fantastic! I usually make a double batch and it keeps well in the fridge. The carrot issue...I put my carrots in a food processor, then zap them in the microwave for about 2 to 3 minutes. They turn out perfect!

Scott Hibb's Amazing Whisky Grilled Baby Back Ribs

I just made these for our July 4th dinner and they were so very good. The regular pork ribs were on sale so I used those and they were still fantastic. I was concerned about how much red pepper went in the recipe- but it was perfect. The meat fell off the bone!
