Donut Muffins

This is the easiest thing to make. It's actually easier than making pancakes from scratch - and without the cholesterol from eggs - probably a little healthier. And it's so delicious! We don't have mini muffin tins so we used traditional muffins. We also used white wheat whole grain flour because it's the only thing we had on hand. Delicious and "heartier" than a donut. My husband and I both feel like it's wiser to treat this as a muffin because the consistency is muffin-like. But, as such, this opens a brand new world of possibilities. Adding brain and cinnamon apple chunks! Blueberries! Fiber powder mix! This is our new breakfast food and it's something I intend to wow the in-laws with the next time they're in town. I didn't make any modifications (except the type of flour used) - and this was amazing.

Campbell's Kitchen Chicken with Sun-Dried Tomatoes

I was reading the below reviews and the common theme seemed to be that this was a near hit. So, I've made a few adjustments and got rave reviews from the hubby. I didn't have any cream of mushroom soup, so I've used cream of chicken instead. This actually helped tie in the entire meal. I served the sauce over angel hair pasta. The sauce consistency lends itself well (it's thick and creamy) to a pasta-based dish. I used about 2 1/2 tablespoons of red wine vinegar because the tang wasn't enough. This MADE the dish by creating complexity. I sauteed some mushrooms in butter (about 1/4 of a cup, thinly sliced) and added it to the sauce mixture. I added some feta cheese (about 1/4 of a cup) because it works well with tangy and creamy dishes. It blended perfectly. I added some chicken strips to the top of the pasta dish because my husband loves chicken and pasta. The combination sends him over the moon. We used grilled chicken strips but you could also pan fry, bake, or deep fry depending on your likes. NOTE: this is a very creamy and tangy dish so if that doesn't strike your fancy then this isn't for you.

Black Bean Spinach Pizza

This is delicious - even after we totally ruined it. My husband made the pizza dough. We used the Jamie Oliver pizza dough recipe (so delicious). We already had raw black beans on hand so I soaked them overnight instead of purchasing a new can. Generally, I have no problem but for some reason these beans would not fully soften. I ended up blending the semi-cooked black beans, onion, and spices in the food processor. The black beans had the consistency of water chestnuts (a little crunch which actually worked amazingly well with the pizza). We also forgot to add the spinach despite having a bowl of spinach set aside with all of the other ingredients. The type of salsa you use will be important. We used store brand (Great Value) salsa with corn in it. Delicious! We also added chicken because my husband has to have meat in his food. Despite these changes, the flavors mixed together with perfection. It did taste very "gourmet" and wasn't difficult to make.
