Salsa Chicken

I really enjoyed this. I crushed some tortilla chips and sprinkled on top when I added the cheese and baked a few minutes longer. So simple.

Golden Sweet Cornbread

Delicious...I substituted Splenda for the sugar and added a couple of tablespoons of honey. This is definitely my favorite cornbread recipe I have tried to date.

Chicken Florentine Casserole

Excellent recipe. I used a couple of cups of fresh spinach, which I sauted in a small amount of margarine before spreading across the bottom of my baking pan. I used fat free half and half and 98% fat free cream of mushroom soup in an attempt to make this somewhat healthier. I microwaved 4 strips of turkey bacon to create the bacon pieces. I also had some leftover roasted chicken (from a previous night's dinner) I used in place of the chicken breasts. I baked as directed and served over garden rotini pasta. Tasted great!

Chocolate Sheet Cake III

This is a moist and delicious cake. I used fat free sweetened condensed milk, but let's face it, we're still indulging here. I didn't have walnuts on hand, but pecans worked well instead.

This bread is delicious. I used the bake rapid mode on my machine as I was in a time crunch, and it did not have time to rise as much as I would have liked. I look forward to trying this recipe on the regular bake mode. Flavor/consistency was still amazing.

Penne with Mushrooms

Delicious! I added some Chardonnay to the mushrooms while sauteing and let it reduce before pouring over the penne. I've made this three times already.
