Oatmeal Pancakes

3 stars for this one. I may have to make these again and adjust the rating, because I have a feeling I left out the flour! Phone kept ringing, reviews speak of watery batter, and I just couldn't remember if I put it in. They didn't fluff quite like I expected, though I added 2 Tblsp flour to the last half of batter, and they looked better. They shouldn't have such ragged edges, so maybe next time will be better. *************************************Okay -- husband and son like them, so I'm moving it to 4 stars.

Old-Fashioned Vanilla Pudding

I doubled the recipe, since it makes so little, and it took considerably longer than 10 minutes to cook. I wanted to be sure not to scramble the eggs or boil the milk too quickly. Very good flavor, I think, but the texture was off-putting to my 20 something sons, who are used to instant pudding. Layered with walnuts and frozen blueberries, it somewhat masked the pudding's texture. I liked it. : )

Whole Wheat Banana Nut Bread

Moist enough, but it has that whole wheat saw dust texture to me, which puts me off. Maybe raisins would help. The outer crust got very dark -- almost seems burned. If I make this again, I'll use only half WW flour.

Applesauce Raisin Bars

This is good stuff! I'm trying to eat healthier, so made some adjustments. I used 1/3 cup wheat flour, 2/3 cup white. Only used 1/2 cup brown sugar, but next time will use 1/3, because the raisins really make it sweet enough for our taste, even with wheat flour. Also increased the spice, since we like more of a kick: 1 tsp cinnamon, 1/2 tsp nutmeg, 1/4 tsp cloves (I don't have or use pumpkin pie spice). I sprinkled 1/2 cup chopped walnuts on top, rather than ice them. Thank you!

Quick Chicken and Noodles

Not bad, but very bland. I doubled the chicken broth, and cooking the noodles in the broth did help flavor wise. I surely wouldn't cook the noodles separately, as the noodles DID pick up flavor in absorbing the broth. Along with the noodles and broth, I cooked cut up carrots, red pepper, onions, a little broccoli, as well as fresh basil. Stirred in fresh spinach and added left over cooked (boiled) chicken last.

Cinnamon Raisin Swirl Bread

Great bread! I have to incorporate more whole grain into my diet, so I used 2 1/2 cups bread flour and 1 1/2 cups wheat. I also soaked the raisins. Since some noted an issue with the rise, and I used WW flour, I used 1 full pkt of yeast (2 1/4 tsp). I used considerably more cinnamon than called for, but will use more next time, as I prefer a stronger spice flavor. Light, soft, moist, and chewy bread, even with 1/1/2 cups wheat flour. Awesome toast, great texture!!

Sour Cream Corn Bread

I liked this cornbread better the next day, since the flavors seem to have mellowed and melded better. I used crumbled bacon, rather than pimento. I do like the texture -- again, better the next day. I prefer sweeter cornbread, since I like it with honey. Good, but I'd probably use less sour cream, if I made it again, and increase the milk. I DID add about 1/4 cup extra milk, since the mixture seemed dry. The rest of the family didn't care for this one.

Orange Glazed Carrots

I like these carrots. I only used 2 tablespoons of brown sugar, as 3 is too sweet for my taste. Also added 1 tsp of corn starch, as others suggested, to thicken -- thus, the four stars. Love the orange juice.

Surprise Cake

We REALLY like this cake! It's moist and actually has better flavor and texture after the first day! I used somewhat heaping tablespoons of cocoa in the cake, since several reviews noted it is not strong of chocolate, and I finished it by sprinkling cinnamon and powdered sugar on top, foregoing the icing. The whole point of making THIS cake, for me, is experiencing the cayenne and chocolate blend. 1/2 teaspoon seems a perfect amount. I would love to try this with coffee, rather than water, but my son (adult) doesn't like mocha. He DID especially LIKE the texture. Thank you for this recipe!!

Blueberry 'N' Spice Sauce

Very good over this pound cake, which was a bit dry without it. I cut back on the amount of cinnamon and nutmeg. Still seemed a bit strong of spice by itself, but complimented the cake as a topping, and the spices blended well, on the whole. I'm sure I'll make this again.

Shredded Beef Chimichangas

Like "somethingdifferentagain?!" noted in her review, I also used just the process of the melted butter on the flour tortillas and baking in the oven on high heat. What a great idea! I used turkey, cilantro, both cheddar and Queso Fresco cheeses, and served these with fresh guacamole and Spanish rice. REALLY good, thanks. I'll be using this again for sure!

Wacky Cake VIII

This is definitely better the second day. I had a piece when I first made the cake and was NOT impressed. Tasted like it was missing something. But the second day it was very good -- moist and flavorful. My adult son really likes it. I sprinkled cinnamon on top, then powdered sugar. I'll make this again, for sure -- but a day ahead of when I want to eat it! : )

Sour Milk Spice Cake

We like the flavor of this cake, but I made several adjustments based on reviews. A little dry, because I only used about 1/3 cup oil, rather than 1/2. My misjudgment. The raisins add sweetness, so I cut back the sugar to 3/4 cup. Other alterations: 1 tsp vanilla, 1 tsp cinnamon, 1/2 tsp nutmeg, 1/4 tsp cloves, 1/2 cup raisins, and 1/4 cup chopped walnuts. Baked 35 minutes in 9x9 pan. Since mine was dry, the icing helped. Next time I'll use the 1/2 cup oil, as called for in the recipe. Thank you. : )

Favorite Buttermilk Bread

Halved the recipe & mixed in my bread machine on the dough cycle. Used 3/1/2 cups bread flour, then added 1 cup white flour while mixing, 1/4 cup at a time. Used Canola oil, ground flax. Baked 30 minutes in white oval Corning ware dish, which is considerably larger than a regular bread pan. HUGE rise, maybe because I used bread flour?? Flavor is okay, but soft texture looks like it'll be very good for sandwiches.

Bacon Ranch Cheese Ball

I think I'm just more of a "dip" person, as I don't care all so much for the nuts on the outside, and I'd prefer a softer texture. Maybe adding 1/2 cup actual ranch dressing, rather than a dry pkt? Plenty of flavor, but I added 1/2 a pound of bacon, not just 6 strips. It's all about personal preferences, so don't be skeptical about giving this a try. Thanks for the recipe. : )

Healing Cabbage Soup

Very good, for what it's intended to be. I used turkey stock, since I made it yesterday from a turkey carcass, so didn't need the bouillon and water. I did use a little celery, 1 small carrot, and a little red bell-pepper. Stirred in some cilantro after it was done. I held myself in restraint, and didn't add dry beans, barley, potatoes, or any other "carb," to stay true to the spirit of the recipe. This has been on my list to try for a few weeks. Thanks! : )
