Apple, Carrot, Or Zucchini Cake

LOVE this! I'm aiming for healthy, so my adjustments are as follows: half white flour & half wheat, 1 cup brown sugar (PLENTY sweet!), about 1/3 cup Canola oil + apple sauce to equal required 1/2 cup, added about 1 cup of raisins, which contributes to the sweetness. Used 1 apple, 1 medium yellow zucchini, 2 large carrots, to equal 4 cups combined. All other ingredients the same. Baked for 35 minutes.

Cinnamon-Raisin Coffee Cake

Very moist coffee cake. A bit too sweet for my taste, and I cut back the 2/3 cup sugar to less than half, since there is also sugar in the topping. The raisins add to the sweetness, as well. I did substitute 1/4 cup wheat flour for 1/4 cup of AP and used 1/4 cup Canola oil, 1/4 cup applesauce. By mistake, I put ALL the "topping" in the middle, so there was no topping. Dusted it with a little powdered sugar. Baked about 28 minutes.

Strawberry Oat Muffins

VERY good. I'm making all things "healthier" these days, but even with changes, these muffins are light and fluffy, which is not what I expected. I used half whole wheat flour & half white, replaced half the Canola oil with applesauce, used only half cup brown sugar (we don't like things too sweet), and I DID add 1/2 tsp cinnamon. Also added 1/3 cup chopped walnuts -- healthy oils!

Applesauce Bread

LOVE it! Used Canola oil, rather than butter, 2 Tbsp ground flax, to replace equal amount of flour, and increased cinnamon to 1 tsp. Used 2/3 cup brown sugar. Super moist! Glass pan, 325 for 50 minutes. Sprinkled powdered sugar on top.

Enchilada Casserole III

Used can of red enchilada sauce, rather than dry pkg mix, added can of green chilies, some cumin, and cilantro, as we like these flavors in our enchiladas. Seemed a 4 star for me, because of the refried beans texture, but that's a personal taste thing, and the rest of the family really liked it. Thanks!

Applesauce Oat Cake

Haven't tasted it yet, but adult son says it's really good. Smells wonderful! Didn't ice this, and I cut brown sugar to 1/2 cup, added 1/2 cup of raisins, which provides a natural sweetness, and 1/2 tsp allspice. Also used butter. Thanks! **UPDATE: Love the denseness! Great spice cake and would be great with cream cheese or vanilla frosting. I just sprinkled powdered sugar and topped with whipped cream -- less sugar, was my purpose.

Creamy Spinach Soup

I'm looking for healthy, so I made changes. Sauteed onion in butter, didn't use flour, used milk (less calories & fat), and chopped up fresh spinach. Very tasty. Next time I may use chicken broth, so there's not MSG from the bouillon.

Oatmeal Raisin Cookies IX

Used 1/2 Canola oil, half apple sauce, added 1 cup walnuts, and 1/2 tsp allspice, but followed the recipe, other than those adjustments. Baked 8 minutes. Really enjoyed them.

Homemade Yogurt

I don't care for powdered milk, so I've been making this with 2% milk, which makes it thinner, but it works for me. If you use a higher ratio milk to yogurt, it thickens better, and I leave it in the gas oven with light on longer, as well. I added a banana and nutmeg, stuck it in the freezer for half an hour, and it's great for breakfast or dessert. Today I used it as a salad dressing. Love this recipe -- thank you!

Black Treacle Oatmeal Bread

I'm looking for healthier recipes these days,and this has been sitting in my box for a while now. Give it a try! I didn't have whole wheat, so I used more oatmeal and less flour. Makes wonderful sandwich rolls -- thanks.

Beer Batter Fish Fillets

My husband loved this, so 5 stars. I'd give it 4, as it doesn't stay crispy very long, and I'm a baked fish kinda gal. Used Canola and olive oil combo. Vegetable oil is not allowed in my house. : )

Chocolate Oat Snack Cake

Very good. Used semi-sweet chocolate chips, because it's healthier. I'll probably add another tablespoon of cocoa next time. Baked 40 minutes, which was a bit too long. Brownie-like texture and, as others have mentioned, is even better the next day.
