Orange Rice
We enjoyed this recipe very much! I used brown rice instead of instant and added some salt. Otherwise I wouldn't change a thing although I would cut the oranges in 3rds next time so they're not so chunky. Thank you for a great recipe!

Chicken Breasts with Balsamic Vinegar and Garlic
This will be my new "company dish" from now on. Quick, inexpensive, and oh so good! For the cooks commenting on the vinegar being too strong . . . pay attention to the quality of the balsamic you buy. I've found that's one ingredient you really can't skimp on. Buy the best you can afford. Thanks for a great recipe!

Bacon-Wrapped Salmon
The way I see it, adding bacon to ANYTHING is a good thing and adding it to salmon is a great thing! This is a wonderful quick and tasty dish. I sliced some potatoes and added them to the pan. In a separate skillet I sauted up some zuchinni, summer squash, tomato, onion, and garlic which made a nice side dish to compliment the fish. Everyone should try this recipe. You won't be disappointed!
