Chicken Milano

This was very good. I made a half-batch which worked out fine except needing to use almost the entire amount of broth to keep the liquid content high enough. Very good dish. Add a vegetable and breadsticks, and you've got yourself a meal!

Lasagna Roll Ups

Very good. I did adapt for myself though. I wanted to reduce the dairy, so I omitted the ricotta and double the tofu. I also used soft tofu instead of firm. Finally, in standard fashion, I added garlic powder and Italian spices to the pasta sauce. I was actually a bit surprised at how much I liked this. It was a little messy to put together, but it wasn't difficult. And it was so convenient to take for lunch as leftovers. I will definitely keep this in mind. *Made this again yesterday with a friend. We used ricotta this time and soft tofu again, but we reduced the mozzarella cheese by half and the parmesan by about that much. With these reductions, we still had more than enough filling. We were all very happy with it again. *Made it yet again. Turns out I didn't have any spinach, so I used frozen shredded zucchini instead. And I used the original recipe's amount of everything else. It made double the filling I could use. I think I prefer it with extra tofu and less cheese, but it was good this way too.

Pico De Gallo

Hubby and I thought this was very good. I really don't like cilantro, so I left it out. Otherwise, I did pretty much what the recipe suggested (although I must admit I didn't really measure anything). I'm saving this recipe to make all the time.

Tomato Bisque II

Very good. I halved the recipe for just two of us, and it was even better than I expected. I didn't have fresh home-grown tomatoes on hand (it is Feb), so I used 1 can of diced tomatoes and 1 small can of tomato sauce. Also, regardless of what others recommended, I was perfectly happy using skim milk. It may not have been completely bisque-like the way I made it, but it was very tasty anyway. I will make this again.

Yummy Yam Casserole

This was very good. I must admit, I used some frozen sweet potatoes instead of fresh yams. Regardless, it was wonderful! My brother remarked that it tasted more like a dessert than a side, but it wasn't too rich or sweet. I bet if I put this in a pie crust, people would eat it like a pumpkin pie. I might have to try that sometime.

Baby BLT

These were very good and made a pretty presentation. I used real bacon bits which maybe wasn't quite authentic but saved heating the kitchen. It did make a lot more than I needed, but I mixed the filling with some cream cheese and herbs to make a really nice dip, so I didn't mind the extras.

Garlic and Herb Cream Cheese

As others recommended, I also omitted the butter and added a tiny bit of milk to get the proper consistency to squeeze through a decorating tip. It was very good, and I can see how it would be incredibly easy to adjust according to taste. This time I used it with different colored peppers, but it could be put on just about anything. I will make this again.

Sausage Breakfast Wraps

I tweaked it a little to take to a church function, but it was a great individual brunch item! I left out the chilies and used eggs. I also found the idea of baking it to be unnecessary and cooked it all on the stovetop. I browned the meat then added the onion and pepper. After the vegetables were softened, I seasoned and added the eggs. It all cooked up great in only a few minutes.

Cherry Almond Pound Cake

This was very good. I used a little green food coloring in the icing and added green coconut to look like a wreath for Christmas. I took it to a church event, and several liked it. Very easy, very good. I'm curious to try putting some shaved almonds in the cake itself and maybe some on top too. I think the crunch would be good.

Italian Sausage and Tortellini Soup

Very good. We did beef it up a little with some of the suggestions, but the general idea was the same. I've never done anything quite like this, and I'm really glad I found this recipe! I added diced tomatoes since we still have an abundance in the garden as well as some onion and garlic. We had a mix of sweet and hot turkey Italian sausage, and I only had beef tortellini. All in all, a great dinner paired with a nice salad and garlic bread.

Grilled Sausage with Potatoes and Green Beans

Made it again tonight, this time in the oven. I didn't pay that much attention to how much of each ingredient I was adding, just kept cutting until it looked right. I cooked it about 50 minutes at 425, but it might have been better to take it out a few minutes earlier. I did not add any additional spices; the salt and pepper are enough with a flavorful sausage. I also used the oil, butter and water as called for.

Slow Cooker Beef Stew I

I adjusted this recipe a little because I wanted to use less meat and more veggies, but I prepared it as written. I don't think any changes are necessary; in fact, I used this recipe because I wanted to throw it all in the crockpot and forget it. That said, after having it the first night, I did add more salt and pepper for the leftovers, but that's personal preference.

Slow Cooker Enchiladas

Very good. I actually changed it up a bit to make it healthier and to use what I had on hand, but the concept and process was all yours. I'm very happy with how it turned out. I used shredded chicken instead of beef, extra tortillas (since others mentioned sogginess), omitted the cream of mushroom (hubby doesn't like them), and reduced the cheese a little (used about 3-3.5 c). I'm already planning to make it next time I cook for a church member!

Chicken Zucchini Casserole

I thought this was very good and so easy. Purely by accident, I forgot to add the sour cream, but I was probably happy with that (maybe it was a subconscious choice, but don't tell anyone!). My husband added sour cream on top and said it was very good with it. I was perfectly pleased without sour cream. I will likely make this again and might even try to do something like this for a church cooking group.
