Fried Chicken with Creamy Gravy

I didn't find the breading to have much taste, so I was pretty disappointed in that. It did give me a beautiful looking piece of chicken though. I know others love this, but I think I'll keep looking for the perfect recipe for me.

Beefaroni

This is pretty good, but I adjusted it quite a bit based on other reviews and my own preferences. I browned the beef with onions, peppers, and garlic then added a bit of worcestershire. I chose to complete this on the stovetop, so I added 1 can of tomato sauce and a 15 oz can of stewed tomatoes to the beef even as the pasta cooked. I used cavatappi and drained it a little shy of al dente, then added it to the heated beef and tomato mixture. I let that warm up all together, added a little broth to keep it moist then served with cheeses on the side. Personally, I mixed cheddar in and enjoyed it quite a lot. My husband topped with parmesan and also enjoyed his variation. I will likely make something like this again but I'll continue to adjust. Thanks for a great base recipe though.

Citrus Mousse

This was only okay. I kept adding juices hoping that it would get some taste, and it never really did. I eventually had grapefruit, lemon and orange juice as well as orange and lemon peel in it. I should have reduced the milk by a lot, I think. I may try something like this again, but I certainly will adjust.

Bacon-Wrapped Asparagus

This was good, but not exceptional. Since I was using turkey bacon, I also salted the asparagus. I'm sure it would be even better with other bacon.

Black Bean and Rice Enchiladas

Very good. I've made this a couple times with leftover meats. Tonight I used shredded steak along with the bean/tomato/rice mixture, leftover white rice instead of brown, and Mexican cheese. Very good and makes a lot! I had 8 inch shells, and I made 10 of them. These also freeze well and can just be reheated for a quick and healthy lunch. It's not exactly what I consider "enchiladas," but it's very good.

Homemade Wonton Soup

This is VERY good. I tweak it by eliminating the ingredients we don't like, but that's just for personal preference. The filling is great, but be careful not to fill the wontons too full (like I did the first time). I'm making this again tomorrow with fried rice...makes a great meal and helps to use up some leftovers too! For my own info after making these many times now: I don't use mushrooms or shrimp. I add a few extra snow peas and sometimes a little extra bok choy. A 12 oz package of wonton wrappers only needs about .5 lb of pork, but I usually make a whole batch and freeze half for later. Do as someone suggested and heat the wontons first in plain water to keep my soup nice and clear. I only leave them in the water for ~30 seconds, then move them to the boiling broth. I also add a lot more broth, because I like my soup "soupy."

Juicy Roasted Chicken

This chicken was so good! I loved the skin! My chicken was much larger, so I cooked it a lot longer, but it was so tender and moist! Great recipe with very few ingredients and very little cleanup!

Sunday Chicken Supper

I left the chicken whole and cooked it on low for about 10 hours (only because I was gone that long.) The chicken was so moist and flavorful! My only complaint was that the dish could have used a bit more salt and pepper for my taste, and that's easily remedied. I may try this again and leave out the bacon to see if I think it's worth the trouble.

Chicken Zucchini Casserole

I thought this was very good and so easy. Purely by accident, I forgot to add the sour cream, but I was probably happy with that (maybe it was a subconscious choice, but don't tell anyone!). My husband added sour cream on top and said it was very good with it. I was perfectly pleased without sour cream. I will likely make this again and might even try to do something like this for a church cooking group.

Slow Cooker Beef Stew I

I adjusted this recipe a little because I wanted to use less meat and more veggies, but I prepared it as written. I don't think any changes are necessary; in fact, I used this recipe because I wanted to throw it all in the crockpot and forget it. That said, after having it the first night, I did add more salt and pepper for the leftovers, but that's personal preference.

Mexican Rice II

Very good as a simple side. My husband seasoned up some black beans, and they were very good together. I do have to admit that I made one change though. I didn't have any tomato sauce, so I used diced tomatoes with pepper & onion. I think I would have preferred it with tomato sauce as written, but I was pleased regardless.

Grilled Sausage with Potatoes and Green Beans

Made it again tonight, this time in the oven. I didn't pay that much attention to how much of each ingredient I was adding, just kept cutting until it looked right. I cooked it about 50 minutes at 425, but it might have been better to take it out a few minutes earlier. I did not add any additional spices; the salt and pepper are enough with a flavorful sausage. I also used the oil, butter and water as called for.

Smoked Sausage and Zucchini Saute

This was fine to use up zucchini and tomatoes from the garden, and it was certainly easy enough. But it was just missing something. I think maybe if I do it again, I'll try to come up with some sort of sauce, but I'm not sure what.

Baked Shells in Sauce

This was very good. I used it as recommended as just a base and adapted for my desires. Also, I used ready-made pasta sauce, not plain tomato sauce as I was certain I would find it bland. I didn't have mushrooms but added carrots, zucchini and onions as well as some extra Italian seasonings and garlic. If I make this in the future, I will saute the vegetables to soften them before mixing. I also didn't measure anything at all, just used the recipe as a guide. It turned out very good, and was incredibly easy. I'm not a fan of ricotta, so I think I'll be using tofu in my pastas in the future.
