Hot and Spicy Tofu

Made this tonight for the hubby. Before cooking, I soaked the tofu in a little soy sauce for just a few minutes after pressing to remove the water, and I added some extra veggies. Everything else I kept as written and was told it was good.

Chicken Breasts with Herb Basting Sauce

As some reviewers suggested, I doubled the recipe and added vegetables. It was good, but it was very oily. Next time I think I'll double the herbs and leave the olive oil at 3 T. Regardless, the flavor was nice, but I think it could have used a little more salt or some garlic or onion salt. And I was very happy about the suggestion to include the vegetables to make it a one-dish meal. Served with fresh bread and enjoyed.

Slow Cooker Enchiladas

Very good. I actually changed it up a bit to make it healthier and to use what I had on hand, but the concept and process was all yours. I'm very happy with how it turned out. I used shredded chicken instead of beef, extra tortillas (since others mentioned sogginess), omitted the cream of mushroom (hubby doesn't like them), and reduced the cheese a little (used about 3-3.5 c). I'm already planning to make it next time I cook for a church member!

Salsa Chicken Rice Casserole

I wish I could review without rating, because I made several changes. To get a little more nutrition in, I added green peppers, black beans and corn. And I reduced the amount of soup and chicken. I liked this pretty well but decided I liked it even better as a dip for tortilla chips, and I think I may make it that way in the future. Very good base recipe that's easily adapted to your preferences.

Sausage Breakfast Wraps

I tweaked it a little to take to a church function, but it was a great individual brunch item! I left out the chilies and used eggs. I also found the idea of baking it to be unnecessary and cooked it all on the stovetop. I browned the meat then added the onion and pepper. After the vegetables were softened, I seasoned and added the eggs. It all cooked up great in only a few minutes.

Stuffed Pork Chops I

This is good. It turned out that my bread had gone off, so I used some dried stuffing. In the future I'll probably choose to use more soup for gravy, but it all turned out good.

Candied Yams

Very good, but it was way too long for the marshmallows to be uncovered. They were almost burned in only 15 minutes. I put on some oil-sprayed foil at that point, and it turned out alright. I'm just glad we were watching. Also, the directions don't mention draining the potatoes, but that's what you need to do. I also mashed them a little but not too much. One of my friends said "this is the best thing to ever happen to sweet potatoes" and proceeded to eat 3 helpings!

Three Cranberry Relish

I've made this a couple times. I do like the sweeter cranberry relish, so this one works for me. Update: I made it again today. It turns out I only bought a 12 oz bag of cranberries, but it was still very good. Also, I always let nearly all of the cranberries pop.

Slow Cooker Stuffing

I don't know what I did wrong, but this turned out inedible. It was insanely bland, but the flavor it had was bad. I may try it again sometime just because I can't believe anyone gave this 5 stars...I must have done something wrong!

Savory Chicken Breasts

This was pretty good. I made small pieces of chicken instead of large breasts and only cooked it for 25 minutes or so uncovered. I would be curious to try it with more seasonings on the chicken or in the crumbs as it was very bland, but sometimes bland is fine.

Cherry Almond Pound Cake

This was very good. I used a little green food coloring in the icing and added green coconut to look like a wreath for Christmas. I took it to a church event, and several liked it. Very easy, very good. I'm curious to try putting some shaved almonds in the cake itself and maybe some on top too. I think the crunch would be good.

Italian Sausage and Tortellini Soup

Very good. We did beef it up a little with some of the suggestions, but the general idea was the same. I've never done anything quite like this, and I'm really glad I found this recipe! I added diced tomatoes since we still have an abundance in the garden as well as some onion and garlic. We had a mix of sweet and hot turkey Italian sausage, and I only had beef tortellini. All in all, a great dinner paired with a nice salad and garlic bread.

I really like this. I put extra chicken in and adjust the vegetables based on what I have on hand. In my opinion, it needs a bit of salt and pepper, but all in all, a very good base recipe.

Creamy Pesto Pasta Salad with Chicken, Asparagus and Cherry Tomatoes

I added a wider variety of vegetables and left everything else the same. I thought it was very good, but hubby doesn't like cold pasta salads. He warmed his and ate it that way, but it's certainly not something he's going to request again.

Baked Shells in Sauce

This was very good. I used it as recommended as just a base and adapted for my desires. Also, I used ready-made pasta sauce, not plain tomato sauce as I was certain I would find it bland. I didn't have mushrooms but added carrots, zucchini and onions as well as some extra Italian seasonings and garlic. If I make this in the future, I will saute the vegetables to soften them before mixing. I also didn't measure anything at all, just used the recipe as a guide. It turned out very good, and was incredibly easy. I'm not a fan of ricotta, so I think I'll be using tofu in my pastas in the future.
