Lasagna Roll Ups

Very good. I did adapt for myself though. I wanted to reduce the dairy, so I omitted the ricotta and double the tofu. I also used soft tofu instead of firm. Finally, in standard fashion, I added garlic powder and Italian spices to the pasta sauce. I was actually a bit surprised at how much I liked this. It was a little messy to put together, but it wasn't difficult. And it was so convenient to take for lunch as leftovers. I will definitely keep this in mind. *Made this again yesterday with a friend. We used ricotta this time and soft tofu again, but we reduced the mozzarella cheese by half and the parmesan by about that much. With these reductions, we still had more than enough filling. We were all very happy with it again.

Tofu and Cheese Stuffed Shells

This was very good. I adjusted a little to use up what I had on hand and was happy with the results. I used my own pasta sauce and also substituted cottage cheese for ricotta cheese.

Pico De Gallo

Hubby and I thought this was very good. I really don't like cilantro, so I left it out. Otherwise, I did pretty much what the recipe suggested (although I must admit I didn't really measure anything). I'm saving this recipe to make all the time.

Tomato Bisque II

Very good. I halved the recipe for just two of us, and it was even better than I expected. I didn't have fresh home-grown tomatoes on hand (it is Feb), so I used 1 can of diced tomatoes and 1 small can of tomato sauce. Also, regardless of what others recommended, I was perfectly happy using skim milk. It may not have been completely bisque-like the way I made it, but it was very tasty anyway. I will make this again.

Gnocchi with Sage-Butter Sauce

Yummy Yam Casserole

This was very good. I must admit, I used some frozen sweet potatoes instead of fresh yams. Regardless, it was wonderful! My brother remarked that it tasted more like a dessert than a side, but it wasn't too rich or sweet. I bet if I put this in a pie crust, people would eat it like a pumpkin pie. I might have to try that sometime.

Baby BLT

These were very good and made a pretty presentation. I used real bacon bits which maybe wasn't quite authentic but saved heating the kitchen. It did make a lot more than I needed, but I mixed the filling with some cream cheese and herbs to make a really nice dip, so I didn't mind the extras.

Garlic and Herb Cream Cheese

As others recommended, I also omitted the butter and added a tiny bit of milk to get the proper consistency to squeeze through a decorating tip. It was very good, and I can see how it would be incredibly easy to adjust according to taste. This time I used it with different colored peppers, but it could be put on just about anything. I will make this again.

Angel's Pasta

As written, I rate it a 4. With my tweaks, it's a 5. I think it needs more garlic and pasta or less zucchini and tomatoes to make it a pasta entree and not a vegetable entree with a little pasta in it. I also added a small cubed chicken breast which made it a whole meal in itself for us. A very good recipe to get started.

Pot Sticker Dumplings

These were fine but not impressive. The dough just didn't have much taste, and that's really what my husband and I like most about restaurant dumplings. The filling was fine, but it didn't make up for the dough being less tasty than I'd hoped for.

Cashew Chicken with Water Chestnuts

Good. I added a couple vegetables to increase the healthiness and to suit our tastes. It wasn't spectacular, but it was good. There's certainly a chance we'll use this one again.

Hot and Spicy Tofu

Made this tonight for the hubby. Before cooking, I soaked the tofu in a little soy sauce for just a few minutes after pressing to remove the water, and I added some extra veggies. Everything else I kept as written and was told it was good.

Chicken Breasts with Herb Basting Sauce

As some reviewers suggested, I doubled the recipe and added vegetables. It was good, but it was very oily. Next time I think I'll double the herbs and leave the olive oil at 3 T. Regardless, the flavor was nice, but I think it could have used a little more salt or some garlic or onion salt. And I was very happy about the suggestion to include the vegetables to make it a one-dish meal. Served with fresh bread and enjoyed.

Slow Cooker Enchiladas

Very good. I actually changed it up a bit to make it healthier and to use what I had on hand, but the concept and process was all yours. I'm very happy with how it turned out. I used shredded chicken instead of beef, extra tortillas (since others mentioned sogginess), omitted the cream of mushroom (hubby doesn't like them), and reduced the cheese a little (used about 3-3.5 c). I'm already planning to make it next time I cook for a church member!

Salsa Chicken Rice Casserole

I wish I could review without rating, because I made several changes. To get a little more nutrition in, I added green peppers, black beans and corn. And I reduced the amount of soup and chicken. I liked this pretty well but decided I liked it even better as a dip for tortilla chips, and I think I may make it that way in the future. Very good base recipe that's easily adapted to your preferences.
