Slow-Cooker Corned Beef and Cabbage

Blueberry Banana Bread

I added a bit of baking powder, and they rose nicely. Might have otherwise, but I wanted to be sure. Made them as muffins then took 'em to church; they were a huge hit. I made half with the blueberries and half with walnuts (half cup each). I think this is the first week that I had no leftovers! Next time I should make another half batch so I get to try them!

Oven Scrambled Eggs

Made a third of a batch for 4 people along with some other items, and it was plenty. They were definitely light and fluffy as others said. I baked it in the toaster oven as described, and it worked great.

Split Pea and Ham Soup I

Good, but it took a lot longer than 2 hours for me to get it down to a green liquid. I did soak the beans overnight since there doesn't seem to be a consensus on that. I cooked it for about 4 hours, and some of the peas were soft but were still identifiable as peas. Everything else was exactly as the recipe states.

Slow Cooker Chicken Taco Soup

This was really good, but I did adjust it a little based only on what I had on hand. Thankfully, I had most of what I needed, and that makes this a great go-to recipe. I only used one can of black beans, drained and rinsed, no other beans. I used a 10 oz can of tomatoes and a 14.5 oz can since that's the closest I had. I also used roughly 1 cup of chicken broth instead of the beer. Everything else was the same, and it turned out really good. I cooked it about 4.5 hrs on high, and that was fine. I can see me making this again in the future since it was so easy and good.

This was very good. I wanted something green with the meal, so I added a few frozen peas near the end of cooking. Otherwise, I did just as the recipe said. There's a good chance I'll make this again.

Cheesy Potato and Corn Chowder

This was good. I didn't need to add anything else. I used the recipe, scaled up about 150%, and it was great. Served with fresh baked bread and a couple other types of soup, and it was a hit.

Baked Apricot Chicken

This is good. I wasn't impressed, but it was a nice change anyway (and it takes a lot to impress me). I used boneless skinless chicken thighs and only cooked them for about 40 minutes.

Zesty Thai Cucumber Soup

This is good, but it's still missing something to be like they have at my favorite Thai restaurant. I think it would help if I use a more concentrated chicken broth next time. I'm not sure what else to adjust, but I definitely think that would help. I liked it well enough to give it another shot anyway.

Slow Cooker Italian Beef for Sandwiches

Very good. I added green pepper and onion strips to cook for about an hour or so then removed them when I took the roast out to shred. I'm definitely glad I had that to top the sandwiches; some friends ate cheese on it, but I was very happy without cheese. The only other change I made was adding some beef bouillon to the water. If you haven't made this before, remember to get some hearty bread that can stand up to the juicy goodness of this meal!

Good. Personally, I thought it had too much oil and not enough vinegar, but other than that, it was very good. I wouldn't mind making this again and adjusting those two amounts.

Chicken Milano

This was very good. I made a half-batch which worked out fine except needing to use almost the entire amount of broth to keep the liquid content high enough. Very good dish. Add a vegetable and breadsticks, and you've got yourself a meal!

Broccoli Cheese Soup III

Made a few changes, but the basic plan was the same. I used frozen broccoli because it's what I had, and I added a little extra Cheddar to finish up the package. Also, because I had used skim milk, it wasn't thickening like I wanted, so I added a small amount of half and half to aid thickening. I took some to a friend and hubby ate the rest. They both said it was delicious and I could do it again!
