Asian Coleslaw

We loved this. I kept the dressing separate until ready to serve. And that way I could send it with my husband for lunch the next day. I didn't have green cabbage, just red and napa. Also, my husband doesn't like cilantro, so I left it out. Very easy, except for doing the julienne carrots. I also put some diced chicken in the dressing for a little protein. It made a wonderful meal with a side of hummus and pita.

Cinnamon Raisin Bread

I split the recipe in half so I could have one loaf of raisin and one loaf with chocolate chips. (My husband doesn't eat raisins.) I did everything the same except to split it, I dissolved the yeast and then divided it in half. Then I followed the half recipe and did everything twice. It probably took more time that way, but it worked out fine. The chocolate version is more like chocolate swirls, not whole chocolate chips since they melted during the rising for the most part. My daughter is one and a very picky eater. She at 1.5 slices of the raisin bread as soon as it was cool enough to eat. Really happy! Would make this again because it was sooo easy.

Chocolate Chip Banana Bread II

Really easy. I didn't have shortening either, so I substituted 1 stick of butter and 1/2 cup applesauce. I also did 1 cup of white sugar and 1 cup of brown as someone else suggested. My husband loved it. I used pecans in just one of the loaves as I'm allergic to walnuts and not a huge fan of nuts in bread. Both loaves were great!

Quick Chicken And Wine

A great go to recipe when I'm in a hurry. The chicken can simmer while I finish the other parts of the meal. My husband regularly requests this chicken.

Maple Bacon Pancake

Amazing. We mixed the bacon throughout and it was wonderful. Husband raves about this. We serve with scrambled/fried eggs, fruit, and orange juice.

Lemon Chicken Piccata

We loved the flavor. I added a few sprinkles of sugar when the sauce started to get bitter and that fixed the problem. The chicken was a bit dry for how they said to do it though. Hence 4 stars instead of 5.

Bread Pudding II

EASY and AMAZING! My husband craves this now. (Just don't forget the sugar like I did the first time... but that just means it's like baked french toast and a little maple syrup fixes the problem.) This was so much easier than most bread pudding recipes I've found. I don't change a thing. I do only put raisins in one half, though because not everyone likes raisins.

Mediterranean Tilapia

So easy. I just put olive oil and lemon on the fish and put it in the oven for all but the last minute. Then I put any sort of jarred tapenade on and return to oven for one or two minutes to heat through... Saves a lot of time and I never have these ingredients. Love it!

Stuffed Pork Chops III

My husband has already requested these pork chops again after making them for the first time last week. The only change I made was to saute the onions first. I think the bread crumbs were a little grainy, but that wasn't a big deal. This was amazing. I did use beef broth, and that was just fine.

Oven Roasted Potatoes

My husband and I loved these potatoes. I cut out the dill, marjoram, and pepper flakes. I also used red potatoes cut into slightly smaller than 1/4ed cubes. I think there were still too many spices and will experiment with fewer next time. I did like that they cooked so quickly at 475, so I would still do that the next time.
