Cinnamon Raisin Bread II

Reviewed: Jan. 21, 2015
Great recipe! I like to try a recipe EXACTLY as written before rating it. Seems only fair that I rate the actual recipe not rate what I think it should be. That said, in this case, I had all ingredients on hand except the egg. I decided to go for it with the standard 1/4 cup applesauce substitute. I am very happy with the outcome. This bread is moist and has a great consistency. It's not very sweet at all which is what I was hoping for. This will be great for my kids to eat as a snack. As a sweet snack, I think it would be really good with some butter and a sprinkle of cinnamon/sugar. I can't say that I understand the reviews that say it's too much or too little flour. The 3 cups made a perfectly textured bread. Again, I followed exactly as written with the exception of having to sub applesauce for the egg. I used my Emeril bread machine and loaded the ingredients in the order based on my bread machine directions ( which were a different order than listed).

Banana Pudding IV

Reviewed: Jan. 4, 2015
I made this twice, as is, no changes to pudding, once with nilla wafers and once with chessman cookies. The crowd preferred the nilla wafers with his one. Great recipe!

Italian Spaghetti Sauce with Meatballs

Reviewed: Jan. 3, 2015
This is my second review for this recipe and once again, I give it 5 stars. I'm adding another review today because I read through a ton of reviews today before starting and was surprised by a few. I cannot believe the people that said that this dish is bland, be it the meatballs or the sauce. This dish is so flavorful! And I love, love, love the way my house smells while its cooking! Those that think it's bland or just tastes like tomatoes are obviously doing something wrong or their ingredients are poor quality. It's also possible that they're not cooking for the full amount of time. Today, I made this dish exactly as the recipe is written, no changes AT ALL. It is time consuming but worth every minute. My husband and both of my kids, 14 and 7 say that this is the best spaghetti and meatballs that they have ever had.

Chef John's Stuffed Peppers

Reviewed: Jun. 5, 2014
Very good! This recipe is a bit time consuming but worth the effort and the wait. For the amateurs, make sure you wash, cut, chop and gather all of your ingredients before you begin. It will make things go much smoother. I'm not usually a fan of changing recipes on the first try but this one seemed easy enough to adjust. I doubled the recipe so I could freeze some for another time. I used the leftover beef broth in place of some of the water to cook the rice. We're trying to eat healthier so I used brown rice instead of white and turkey in place of the beef. Even with the adjustments, this was a super delicious meal.

Creamy Chocolate Frosting

Reviewed: Mar. 10, 2014
I didn't think that I could ever be surprised at how tasty a homemade chocolate frosting could be. I'm just going to tell you that after frosting my cupcakes, I put the leftover frosting in a storage bowl in the fridge, took it out the next day and ate it like pudding. Yeah, it's that good!

Chicken Asparagus Roll-Ups

Reviewed: Mar. 10, 2014
Excellent recipe that would be great just as it is but I thought that some of the review suggestions sounded yummy and we were not disappointed! My only changes were to add a bit of the "sauce" to the inside of the chicken and a slice of prosciutto over that, then I added the provolone and asparagus, rolled them up and followed the rest of the recipe. Very good! And I am so happy to have a new chicken breast dish!

Downeast Maine Pumpkin Bread

Reviewed: Nov. 19, 2012
Great recipe! Do not rush removing from the pan and don't judge the flavor based on the first day, the bread definitely tastes better on day 2 and 3. Huge difference! My only change was to replace the 1 cup of vegetable oil with 1/2 cup of coconut oil and 1/2 cup of butter. I used a cast iron bundt pan, greased it and lined it with a cinnamon/sugar mixture to add a kick. Yum!

Alfredo Sauce

Reviewed: Mar. 25, 2011
I love alfredo sauce but never ate it at home because the bottled stuff is all TERRIBLE! I also thought it would be hard to make a good home made sauce. This recipe proved me wrong! I followed the recipe exactly and it was super easy and so delicious. I will continue to use this recipe and experiement with other ingredients (just because that's what I do ;-)

Slow Cooker Texas Pulled Pork

Reviewed: Sep. 19, 2010
Excellent! I don't have a variation just yet but probably will not need it! It's so full of flavor without being too overwhelming with bbq sauce. My only change was to cut the onion in larger pieces which was a GREAT idea. My husband loved them as much as the pork! They were almost like eating candy!

Rempel Family Meatloaf

Reviewed: Sep. 19, 2010
Excellent recipe! I made it twice before posting my review and was extremely happy with the recipe both times. The second time, I doubled it for leftovers the following day. I stuck to the recipe exactly x2, shaped the loaf and placed it in the center of a 11x9 baking dish. I placed slices of bread under to absorb any excess grease (as suggested by another reviewer) and it was just as good as the first time, just bigger! The bread really does absorb well and is very easy to remove from the bottom of the loaf once it is done. Thank you for this excellent recipe!

Banana Sour Cream Bread

Reviewed: Jun. 22, 2010
I have made this recipe over and over again. It never fails me! It's become expected that I bring it to my department's potlucks and nobody else dares to attempt banana bread! My family looks forward to the holidays when I show up with little loafs for each of them. It is, by far, the best banana bread recipe I have ever tasted. I can't understand some of the reviewers that had issues with it as I have baked it so many times, in so many different pan types. The only person that didn't like it, doesn't like bananas! If you know ANYTHING at all about baking, adjusting the temp and times for varied pan sizes is quite simple. And I'm a novice baker. In conclusion, if the recipe fails, it's YOU not the recipe!!
