Quick and Easy Alfredo Sauce

This really is a great tasting sauce!! I was surprised that you can not taste the cream cheese at all; very "authentic" texture & flavor!! (I was a bit worried at first when my butter and cream cheese did not blend smoothly, and I thought it was because I used margarine and lite cream cheese, but upon adding the first bit of milk it became creamy and the end result was wonderful.) This is an instant classic at my house.

VERY delicious! However, I tried it first in the microwave and it cooled to a ROCK, so adjust that time and watch for thickening if you must do it that way. Luckily I had made just a half batch (afraid of eating it all myself! ;) ) and so I made it again on the stovetop and it was wonderful. The kids called them tootsie roll balls.

Tofu Fudge Mocha Bars

Delicious, thank you!! Bake in an 8x8 pan instead and you get perfect, rich fudge brownies! (bake them longer too). I tried them with one substitution: instead of the coffee, I used flavored hot cocoa mix - lots of variations possible.

Honey Mustard Tofu

Really delicious! Maybe a bit tricky if you're new to tofu - definitely PRESS it first (half hour or more under a weighted plate) and it'll be fine. I didn't think my sauce was going to be thick eough but it thickened beautifully when I added the honey-mustard; also worried about the tofu breaking up but it held up fine. Even my toddler ate hers all up in a rice bowl! I used just one bouillon cube and loved the flavor.

Hot Spinach Salad

Very tasty!! I was asked for the recipe both times I brought it to pot-lucks. I didn't add all of the dressing (I didn't end up with as much spinach after trimming) and saved it for my own salads at home - mmm! (The dressing is especially good. It's good on a plain old lettuce salad as well!) Great flavor combinations. Thank you.

Breakfast Sausage Casserole

We love this recipe and make it often. It can be easily adjusted for variety: for more flavor, be sure to use seasoned bread or croutons, and consider using pepper-jack or another spicy cheese. My mother adds mushrooms to this dish.

Yummmmmmmmm!!!!!! Thanks, these are easy and delicious! Actually I used white candy chips, because I had them, and I'd guess that was at least as good as butterscotch! :)

Crunchy Taco Mix

Cheese Enchiladas with Green Chiles

Delicious! I didn't use the chiles though, and so filled with a bit more cheese. It was easy to double for a party, too, and everyone loved it. I also made some with green sauce and found that even tastier than the usual red. The monterey jack really is the best! We're so glad to have some leftovers for lunch tomorrow! I used a "southwest" style salsa (with corn & black beans) and loved the extra color & flavor that added as well.

Whole Wheat Beer Bread

I can hardly believe a bread so easy and quick can be so good! I used to buy an expensive bread-machine mix for beer bread, but never again! Even the 3-year old liked making and eating this.

Three Sisters Soup

Wow, FABULOUS! Had requests immediately to bring this again next year! Makes a SUPER Thanksgiving dish - fun and delicious!! Also works great with vegetarian broths. Easy to make, especially if you can find frozen cubes of butternut. Chop the potatoes small enough for them to cook with the others (I had mine too large and had to cook it all a bit longer). Thank you for sharing this!

Easy Granola Bars

LOVED THESE!! A very easy recipe for kids, and so adaptable!! I love use-what-you-have recipes, and this is certainly a good one for that! (I substituted raisins and miniature M&M's, yummy!) Yes, even though they're delicious warm they really need to cool to firm up - we ate some out of the oven with spoons though as we just couldn't help ourselves!! Thank you.

Baked Pineapple

This delightful dish has become a favorite with my family! It's sweet, rich and not exactly healthy but a great treat. Makes a unique potluck idea: there won't be duplicates!! Good idea to mix first flour & butter, then add sugar & juice, then pineapples and last fold in cheese - nice smooth texture this way. (Though I've also mixed it all right in the casserole for a super quick dish! Never had a problem that way either!) By the way, it only serves four in this house! ;) I would double it to share.
