Ice Cream Cake
i haven't actually made the cake yet, but 5 stars so far because i love ice cream cake! i'm going to make this cake tonight for my niece's bday tomorrow. i read from the reviews that a lot of people used 9-in round pans, which i'm planning on doing and added the ice cream by slathering it on the cake. i found a tip on another site which i think is very helpful with using round pans. take another 9-in pan and line it with wax paper and pack the ice cream in there. freeze it overnight (4 hours at least) and then flip it over on the prepared cake and top with the other layer of cake. ooh, and i just thought of this myself...if you want to do two thinner layers of ice cream, use the same 9-in pan. line the bottom with wax paper, fill it half way with ice cream and do another layer of wax paper which hangs over the pan's sides and fill the rest of the pan with ice cream. i just came up with this so i haven't tried it before, but after you're done freezing the ice cream in the pan and before you dump the first layer of ice cream onto the cake, hold the wax paper taut so the other layer of ice cream stays in the pan. sorry if it doesn't work!!

Eclair Cake
I love homemade whipped cream and frosting so much more than the store bought kind, so I made the recipe a little more complicated. I used non-fat milk, homemade whipped cream, and I made ganache for the frosting which I spooned over the cake before the ganache got a chance to harden. I mashed up the graham crackers and added melted butter to form a crust just because I like graham cracker crust more than graham crackers. For the second and third graham cracker layers I just sprinkled the graham cracker and butter crumbles. The cake is delicious after a few hours of chilling (we couldn't wait till the next day) but it doesn't hold together well until a full night in the fridge. I read the recipe wrong and only put in 1 box of pudding mix and so it was a little thin. But sooo fab! Thanks for the great idea! :)(For the ganache I whisked in about 9 oz of Nestle Toll House mini semi-sweet chocolate chips to 1 cup of gently boiling heavy whipping cream but I had way too much frosting left over, so next time I'll reduce it or make something else to put the frosting on.)

Black Bean and Salsa Soup
Super easy to make and very tasty. I used Trader Joe's hot chipotle salsa and it gave the soup a nice kick. I doubled the cumin and I only blended one can of beans and added the other can as they were when I was heating the soup up at the suggestion of other reviewers. With a little salt and pepper and some freshly squeezed lime juice everything was balanced perfectly. When I eat the leftovers later today I'm going to add some cilantro too. Thanks!
